Bread Recipes and Problems With

The problem I have with low carb bread and muffin recipes is the repeatability of that hot from the oven goodness. I've found with both, they are AWESOME fresh out of the oven, in a small dose, but let it sit on the counter a few days or even hours, and cold, they are just meh.

I need a small bread recipe I think. Any favs out there? Something that you've tried and liked that makes only one or two servings at a time?

    Are the breads yeast breads or quick breads? Have you tried freezing the portion you don't eat?

    I've been trying to find a doable yeast bread recipe too. I think I need to do some experimenting when I have a free weekend

    Quick breads. I haven't tried yeast breads yet. I've tried microwaving leftovers to heat them up but somehow it's just not the same. I guess I'm just picky.

    I wrap quick breads in foil and freeze. When they thaw, they taste pretty much like they did fresh, other than they aren't hot.
    I cleaned out my freezer the other day and found a nicely wrapped loaf of pumpkin bread - from October. Now, I know I used white flour in it, so it's not on my "can eat" list, but when I thawed it out it was beautifully moist and the kids inhaled it. They said it tasted as fresh as the day I made it. I could tell it was still sticky and nice when I cut it for them.
    What you might try doing is wrapping it in foil once it's room temperature, and then putting it back in the oven wrapped in foil to reheat. That should retain the moisture in it and it won't be soggy like the microwave can make things.
