Bone Marrow - yum and yuck

Stopped in at my favorite steak place and decided I just wanted an appy - and their roasted brussel sprouts which are delicious and cooked in bacon grease. I see bone marrow on the menu. Maybe I haven't been paying attention, but I've never seen that on a menu.. sorry for the blurry pic, but they delivered some femur roasted into a jelly. I scooped and ate off taro chips. It was SUPER rich and pretty delicious, but dang there was no way I could finish, it became way too much. My dogs loved the left overs. j4kfarbfjmmm.jpg

    I had to do it :) I can't bring myself to do organs yet but some marrow was worth trying. They typically spread it on toast which would be more appropriate if I ate toast. (and so no one has to bother asking, I'm 100% sure this was some cafo cow - in restaurant grass fed is rare)

    It is very rich and I can't eat huge amounts of it. I love it... if from a healthy animal. I've had bone marrow from grocery store beef that I couldn't eat at all. Strangely, I prefer my marrow raw. I can eat more and like the texture better. I guess from living with the Inuit I have some strange preferences. Now what little bone marrow I get has to go to my Eskimo dog. She is barely getting enough raw meat treats to keep her healthy and warm outside.

    In my mind I love bone marrow...in practice it usually ends up in my body by way of seeping into my homemade bone broth.

    I grew up in a home where the marrow in the beef marrow bones was always prized. Soup was made often, and always included these bones. My mother and I also enjoyed cracking chicken bones open to eat their marrow. I never knew that this was considered nutritious or a delicacy.
    I believe that my family ate this way because they grew up in war-torn Europe, and went through the depression.
