Low-Carb PIZZA - Your favorite recipes?

Which Low-Carb Pizza recipes have you tried and liked? (Any variations, not just the lower-carb bread-base type. I'm open to any interpretation of pizza-iness for the Keto crowd!).

Bonus points for reasonably quick/easy recipes suitable for 'week-night' dinners.

    I made 2 fathead pizzas last weekend. Delish!!! I mixed a couple tablespoons tomato paste with a container of artichoke parmesan dip for the sauce.

    Thats my favorite too. Once you've got the crust your imagination is the limit on the toppings. I made a chicken alfredo pizza that was great.

    I've seen people cut the crust and use as sandwich bread, and make garlic breadsticks with it too. It's so good

    Oh wow. How did I miss Fathead Pizza all this time? It looks lush! I've been low-carb for well over a year but somehow never checked out this recipe. Thanks.

    It's probably a bit more involved than I'd like for a weeknight dinner though, I'm embarrassed to say. (I suffer with chronic pain & fatigue so what with that and being a full time mum to an energetic 4 year old I'm exhausted by mid-afternoon - I really struggle with food prep & cooking an evening meal nowadays, which is a shame as I used to love cooking before all my health problems).

    I'm desperate for stupid-easy, quick dinner ideas - im soooo tired of omelette or bacon & eggs for dinner! X

    This is the only one I have made so far, but if you want to try the cauliflower trust type here is one recipe. I have done it the way it's listed with the same toppings and also with more meat type toppings. Just have to be sure you bake the crust for long enough before the toppings or it gets soggy.     It really only takes like 2 minutes to put together.

    I'm sorry you're so fatigued that has to be so difficult. You could always make it in advance and put in the fridge till dinner time then it's just like using a pre made crust.

    I've made a pizza dip that satisfies the urge for me. It's a recipe I found somewhere, and have modified for my likes. I begin with cream cheese spread into the bottom of a baking dish, top with pizza sauce and toppings of choice, bake at 375 until it's good and hot (30 minutes, or so). I recommend you spread the cream cheese sort of thin (I'm sure seasonings could be added to the cream cheese too) because it makes it rich. Hubby and son approve. I tried the Fat Head pizza in the beginning. It was labor intensive for me then too (fellow fibromyalgia sufferer here!), but it was good. It's just very filling imo.

    @karlottap we've made that same pizza dip for years before I was lc is so good. You can microwave it to, even easier :)

    I do the skillet pizza which is mozz. cheese on the bottom of the skillet topped with tomato sauce and your toppings

    Off on a tangent- my friend found eliminating sugars helped her fibromyalgia symptoms. For me I took anti candida drugs for a week n went no sugar n that has hugely improved chronic fatigue. Hope LCHF is helping you both.

    I love fat head pizza and suspect I will get faster making it but would save it for weekends or when I have more energy.

    This is what I do, too (though I often do just mozz and pepperoni; I may or may not dip it in tomato sauce depending on the day). I love it! I am way too lazy to make one of the crust alternatives; I love how easy and tasty this is.

    I use a recipe from the wheat belly cookbook which is similar to the fat head but with no cream cheese and I sub pumpkin seeds for almond flour (pulverized in food processor) due to allergies.

    @SamandaIndia, the improvements I've seen in my fibromyalgia (pain levels of 6-9/10 on an almost daily basis, and is now 0-3/10!!)has become the primary focus of why I eat this way. I was able to discontinue the medications I was on for it too. I had been unable to work (im an RN) for ten years, and am now working (very part time schedule, but I'm working again!) Plus, the motivation is unbelievable to not recreate the situation where it returns! I've tested myself with a couple of items (ice cream, and some green peas and corn in some soup) and paid the price with a few days of pain afterwards each time! I still have to watch for overexertion (word? It is for me! :smile: ) situations or will have a pain response. Anyway, thanks for your well wishes! I so glad you're having good results with this woe too! It's been great watching your progress! :smiley:

    Huge hugs. So excited for you. My friend is really noticing her pain levels reducing too. Also easier to recognise triggers when diet stays similar. I feel n have happy teers for you. Having watched what my friend went thru in last 6 mths I can imagine the relief of moving to a healthier space after so many years. Congratulations!!

    I made fat head pizza base yesterday with italian herbs like thyme, oregano etc in the crust. Had some yesterday with parmesan mid morning as a pizza. Today I have taken some as a cold cracker base and put vegemite on it. Australian comfort food. Yum. I Recommend left overs as a cracker base.

    I have not eaten in 20 hours, still do not really want to eat, but feel I should make up for all the lost nutrients (ugliness). Thanks everyone for inspiring ideas that help me get through my less than inspiring moments.

    I made a pizza on a basil and herb tortilla yesterday. Might be more carbs than you want but it was good. Used salsa and nacho cheese for the sauce added pepperoni and chopped fine chicken. Lots of mozzerella yummy. Going to try the cauliflower crust next.

    What pizza sauce do you all use?

    I use the Wild Oats Organic Parmesan and Romano pasta sauce from Walmart. It has 6 grams of carbs (4 net) per 1/2 cup, so really low compared to a number of other types. Mainly I just check carb levels and ingredients for known sugars.

    I struggled with cauliflower pizza for forEVER and finally got it to work for me. I used:
    • 1 cauliflower head
    • 1 large egg
    • 1-2 tbsp of almond flour (just enough so that the mixture holds together and isn't soupy)
    • Olive oil (for the pan, not the dough)
    • Spices (oregano, salt, pepper, whatever you want)

    I 1/2ed the cauliflower and put it in the blender, and filled the blender with enough water so the cauli was fully covered. Then pulsed it until it was little bits, like rice. Drained and mixed all of the above to form a "dough". Coated a small pan in olive oil and squished the mixture onto the pan and cooked it on 400 until the dough was a light brown and obviously cooked (about 20 mins). Added toppings (pizza sauce, pepperoni and cheese) then put it in the oven on BROIL to toast the cheese.

    It came out amazing! I did take pics but idk how to post pics here from instagram.

    I skip crust entirely. I just sprinkle cheese on parchment paper, add toppings, sprinkle a little garlic powder or actual garlic if I'm not too lazy to chop it up and a little Italian seasoning blend. Broil it til it's brown and tear off pieces as I eat it. Can also cut into squares... Sometimes I'll dip it in pizza sauce but not always. Sometimes I'll dip it in ranch or even garlic butter, if I'm feeling real bad! :wink:

    I am a skillet person. No sauce. I just get my small pans out. Medium heat, mozz cheese and pep or shrooms. What ever. And that's it. Wait till edge of the cheese is brown and done. My kids love it. Same flavor of pizza I even cut them into small triangles for them

    I just made a fathead pizza last night! It was pretty legit, not as amazing as my chewy crust carb loaded pizza :D but it does the trick!
