@auntstephie321 I don't know how close you are in NY, but maybe you could make a suggestion?
If you can't find one in the stores, I'd recommend finding a butcher!0 -
If you're looking for fatty pig meat, I would recommend pork belly, it's absolutely divine. That's my go to meat when my protein levels are getting too high and I need to balance it out with fat. Or a nice slow cooked pork shoulder will deliver a nice high dose of fat to your daily macros.0

I didn't think of that...I get pork shoulder on the bone periodically... I just don't have a go to recipe. The one I use is carby with the sides/sauce... I didnt' like the Nom Nom Paleo Kahlua Pig... So I don't have one I just love.
Aside from that, I'd just look for lovely fatty toppings and make a "gravy" or something. Personally I just pair it with a fattier side. Like sausage or something.0 -
I think ham steaks are already trimmed. Maybe just buy a ham and cut it up0

My grocer has hams that are cut in half, with the bone in. Have to watch for sugar cured types that have added carbs for flavor. The smoked ham would be best. I can also buy a ham steak that has the center bone still in.0

Do you have a Winco? Or a Mexican grocery store / butcher? You can usually find a shank portion ham that has a sizable amount of fat on it. That's my preference.0

I saw this at my local grocery, you might be able to search and see if they have it in your area
