Meal ideas for my non-LCHF family

I try to make things for dinner that I can enjoy as well. Like, if I'm making spaghetti for the family I'll make myself some spaghetti squash. If I make grilled chicken with veggies and a starch, I'll just skip the starch. However, I feel like I'm in a food rut. 2 of my kids are picky eaters, my H is a picky eater, my one daughter doesn't like meat and my other son doesn't like carbs but is starting to develop a conscience about eating meat (a separate issue I realize). Anyway, any meal suggestions that can please a crowd and satisfy even the pickiest eaters? Any suggestions appreciated.

I'm making this tonight and turning into a one pot dish with a side of egg noodles for the family.

This is one I've tried a few times and it's great everyone loves it.. Be sure to reduce the sauce like recipe says or it will be watery

We do breakfast nights to where I just add biscuits or grits to theirs and I have eggs cheese and bacon lol

Any meat night I just cook a potato for hubby with bread if he wants and I have meat and veggie

You could always do a build your own... (taco, wrap, asian wrap). You just lay out the ingredients and let them make it the way they want. For example for Tacos, I would have some sort of meat, lettuce, tomatoes, onions, cheese, grilled peppers, sour cream, etcc.. For your self you can build it as a lettuce wrap but the others could have a taco shell. Look up Vietnamese rice paper in google images. My family does something similar to a taco but asian style! We lay out the possible ingredients, but I now use lettuce as the wrap instead of the rice paper.

If the picky kids are old enough - and the meatless daughter and son in questioning - they can make their own stuff if they don't like what Mom's making. I'm not a short order cook. I batch cook things that can go either way. I make what I make. They eat or don't....

I agree with @KnitOrMiss. I used to give my kids an option to have something else if they don't like dinner, but it turned into a problem when my picky son chose pb&j every night instead of the dinner I prepared. So I put a stop to that too. I understand not forcing someone to eat meat if they don't want to, but since there's always a variety of items at the meal table, everyone can find something to eat. I've been cooking more low carb dinners lately and the family doesn't reallly notice. :)

They are 7 and 9 and my 12 year old is Autistic, so preparing their own meals is not an option. We do have a rule in our house that you eat what is in front of you whether you like it or not and of course I always try to make stuff that everyone likes. What happens though, is that I make a meal for them, and I'm the one who can't eat it, so I'm trying to find some more stuff that is all inclusive.

I tend to make big batches of everything but cook something new everyday so there is always an overlap of something for the picky eaters. Today I am making chicken fingers for picky boys but picky husband won't eat chicken so he'll have the spaghetti leftovers from 2 days ago or the pulled pork from yesterday (along with me since I avoid the flour coating on the chicken).

I do the same with veggies. There is usually a leftover of something available or some raw veggies.

Mine are 8, 11, and 13 so I tend not to encourage them to cook at the same time as me because they take up too much space and make such a mess.... Hubby isn't much better. ;)

    ^^this

i have a VERY picky eater...in fact, we have had every test known to man to find out if something is wrong. NOPE, she just loves to be choosy! LOL

    so mommy makes what
    (1) mommy likes
    (2) mommy has money for
    (3) mommy has time to make

you can eat, or you can make a bowl of cereal.

i have a 21, 19 and 7 year old, plus hubby. NO WAY i can please everyone.

idea: we had pizza night, i made pizza "bowls" but had a crust made if anyone wanted to add their toppings to a crust (hubby and daughter did)

tonight i am making enchiladas with tortillas on the side; so i can eat everything i am making, and they can add tortillas if they want. no extra cooking or prep-work for me.
    :)
