Edamame Spaghetti - Thanks to ???

Someone on some discussion string on some recent date brought to our attention edamame pasta and mentioned that it can be found at Costco. Imagine my surprise when the Costco in Mobile, Alabama had it on the shelf. (My apologies to Sweet Home Alabama.) I took a chance and bought two boxes, which according to the package represents 32 servings total. Good thing we liked it or I'd have had another 30 servings to choke down all by myself.
It tastes just the way I want pasta to taste, i.e. like nothing but whatever is on top of it. The texture is different, not as smooth and slippery as I prefer but my husband and I agreed that it's acceptable. The package wants you to "bring to a boil and simmer for 4-5 minutes." Four minutes is tops to my mind. It cooks very fast.
The stats are 24g protein, 21g carbs, 11g fiber, 6g sugars per two ounce serving. I'm assuming the two ounces means dry. Two ounces dry, cooked, was plenty yesterday for the two of us when topped with a hearty meatball-tomato-cream cheese sauce.

I tried in months ago. Personally, I didn't like it. Maybe I over cooked it, I don't know, but I ended up tossing the box in the garbage. My hubby never wanted to see it again, lol. So glad you liked it!0

I made a post about it after I discovered it at Costco and I make sure to mention it in any pasta substitute post that I see haha.

I love it too, but it makes me retain water. So I only eat it sometimes.0

The black bean tastes better, and the organic soybean (NOT edamame) is closer to pasta texture than the rest. Explore Asian is the brand. We both love it, but don't overcook. It really needs to be al dente.
A good trick to keep your serving sizes down is to ladle the sauce of choice into your personal pasta bowl, then top with the cooked noodles. It isn't hidden by the sauce so it looks like a 'usual' portion of pasta.0 -

I eat organic edamame by explore Asian. It's really similar to pasta in texture. I'll keep my eyes open for the organic soy bean one
