What I call "Veggie Frittatas"
Preheat oven to 375F
Take a large muffin tin/pan and spray/grease it.
Crack a large egg into each hole (My pan has 6 deep holes) and scramble them.
Place a good sized spoonful of your choice of veggies into it. I use a frozen stir-fry mix that I've microwaved to heat up and drain the water off.
Optional: Place a 1/4 slice of your choice of deli cheese on it. I use Veggie Yogurt Cheese.
Bake for roughly 30 mins or until they don't look "wet" on top in the oven and a butter knife will come out clean. Each Frittata is about 94 cal. if ya use this recipe according to the recipe builder on here.

thank you for this recipe. I don't have a 6-hole muffin tin, but I imagine my 12-hole one would work. How long would these stay in the fridge, do you think?0

Chop a jalapeno pepper, 2 corn tortillas and 2 pieces of pre-cooked bacon into small pieces. Cook a few minutes on high heat in a nonstick skillet. turn to low add 2 scrambled eggs and cover until done then add cheese and salsa. I eat this a lot.
