Maybe pregnant and Paleo (namely devilled eggs)

Hi folks,
My husband and I are trying to start a family and in the meantime I've switched to a Paleo diet (just to make sure I'm keeping nasty stuff out of my body In the even we conceive... Fingers crossed!)
Overall I don't have an issue with eating Paleo- where I struggle is that I LOVE deviled eggs but the ones I love are made with ranch dressing and bacon bits.... So now I need a new Paleo friendly recipe for deviled eggs that doesn't have ranch or bacon in them (just to be on te safe side of the additive/nitrate-ratio)
Any ideas? I'm fussy about my deviled eggs being plain so the more flavour the better! What's your go-to recipe??

I love deviled eggs!
I use my own paleo mayo and things like curry and cumin, or chipotle chili powder, or sundried tomatoes and garlic, or pesto, or carmelized onion - did I mention I love deviled eggs.
Don't give up on bacon - Costco sells some antibiotic free bacon that is so thin it crisps right up - perfect for bits
Also, if you switch to fresh eggs, they do not peel well. Just stick them in the fridge for a couple of weeks and they'll work better.1 -

An old restaurant trick that works: add a half-tablespoon of baking soda (bicarbonate) to the water before boiling your eggs. It makes the shells stick less.

Excellent- thanks!! (I didn't even think of throwing sundried tomatoes in my deviled eggs, or that Costco has nitrate free bacon... Yippee!!!)
I feel confident that I will be an expert egg peeler
HestiaMoon- I too am obsessively in love with eggs in most forms (as in I eat between 12-16 eggs every week)
