I like to take breakfast sausage, raw, and mix it 1:1 with a block of cream cheese (or 1:2) and use that in my "half" of our batches of poppers when we make it. I don't use Cajun Shake or spicy things, as I'm what my guy affectionately calls "white girl spicy,"
as I am a "white girl" and I'm more on the level of pumpkin spice than cayenne.

Do jalapeños become less hot with ribs and seeds removed and then cooked? I often find them too spicy for me raw. I do love poblanos , though.0

Yes, @Jan93L - I can only handle them cooked with onions and garlic in things - or raw/pureed/cut in things like salsa. I was a total chicken to eating them, but the creaminess of the cheese with the saltiness of the bacon mute the heat in general. I still get a few sometimes that are "too much." I find that adding the sausage mutes the heat or balances it out further.1

@KnitOrMiss. Thanks! Those look so yummy! I wonder if pre cooking the bacon a little would help. Does the cheese slide out when they are turned?0

I've made these and found it yummy. No Cajun shake needed. No real need to turn them. I like the breakfast sausage idea, I experienced that the bacon slips off with the first bite anyway.0

@Jan93L - If you wrap the bacon properly (this picture is a bad example!), the cream cheese doesn't get exposed at all. I would NOT precook the bacon, as you need all the yummy fats to make it all meld and to cook the bottom of the bacon unless you put them on a elevated grate. I find that each "tray" cooks better than the last due to the extra bacon fat remaining in the pan.
Personally, I use an offset spatula (cake/icing spreader) to fill the cream cheese in, and a spoon to scoop out the spines/seeds. I've made this enough in the past year that I have a whole "system" to it. For bigger jalapenos, I even use 2 slices of bacon to cover it all! I don't broil, I bake them (takes a little longer), and sometimes broil to finish...0 -

I use garlic and herb cream cheese in mine and wrap them in prosciutto! Not very spicy at all and so delicious!2

I made them last year after DittoDan posted about them. They are delicious, and I wasn't a jalapeno fan before then! Use gloves to remove stems and all the white inside, and they taste sweetish, not spicy at all. If you want a spicy kick, leave the white in. Personal preference matters here. I would add cheddar to the cream cheese, and bacon bits too! Come on pepper plants! Mama needs some poppers, lol!1
