Food options for a non-cooking, single person, who works 12 hour days without a "lunch break", is rarely home, and is OCD- so no leftovers..... with a 1300 cal limit per day.

    Options
    Veggies, cottage cheese, fruit, oatmeal (Trader Joe's has frozen oatmeal you heat up in the microwave), stir fries (easy to make, and you can make a big batch to last several meals), smoothies, yogurt, string cheese. Just a few snack/meal options.

    Boiled eggs, single serve tuna. And I bulk prepare as much as possible so I only need a mic. Brown rice keeps, millet keeps (not as long), frozen veggies keep, chicken breasts keep! It only takes one day of cooking and usually less than an hour!

    Romaine lettuce
    Chopped beets
    crumbled goat cheese
    lite balsamic Vinaigrette
    Can add walnuts or pecans if desired




    Romaine lettuce
    black beans
    canned or thawed frozen corn
    shredded Mexican blend cheese
    tortilla strips
    Light Ranch or Chipotle Lime Vinaigrette or even salsa for dressing; top w/a few tortilla strips or crushed tortilla strips


    Also Trader Joe's has some great pre-made salads--Mega Crunchy Salad with a Bite is my favorite!

    Wraps--I like OLE Xtreme Wellness Spinach Wraps. I'm vegetarian so I use tofu, or veggie coldcuts or sandwich spreads, but you could buy tuna, egg, or chicken salad from a deli. . .or sliced roast beef, or turkey. . . add lettuce tomato, onion a touch of mayo! Ideas for filling them are limitless.
