Cream Cheese Pancakes (Low Carb and Gluten Free)

These delicious low carb pancakes taste like skinny fried cheesecakes! They can also be made without sweetener and rolled to make delicious low carb wraps!

Serves: (4) 6" pancakes
Ingredients
• 2 oz cream cheese
• 2 eggs
• 1 tsp granulated sugar substitute (IBIH recommends)
• ½ tsp cinnamon
Instructions
1. Put all ingredients in a blender or magic bullet. Blend until smooth. Let rest for 2 minutes so the bubbles can settle.
2. Pour ¼ of the batter into a hot pan greased with butter or pam spray. Cook for 2 minutes until golden, flip and cook 1 minute on the other side. Repeat with the rest of the batter.
3. Serve with sugar free syrup (or any syrup of your choice) and fresh berries.

I use this exact one but leave out the cinnamon and I love them! Will try to make some with cinnamon to see the difference.0

I didn't have regular cinnamon but I had Saigon cinnamon which is a little spicer....so I used just a dash. Love these pancakes. Next time I'm going to cook sausage links and wrap a pancake around the sausage link....great for grab and go breakfast if you're dashing out to a ballgame or work or whatever!0
