Soup recipe?

Hi All! It is starting to get cold where I live and I'm really in the mood to make a big pot of soup. Does anyone have some good recipe ideas to share?

    Yep. Cold weather and soup go hand in hand. My problem with soup, as it pertains to carbs, is not the soup itself but rather the piles of crusty bread or saltine crackers would I eat with it. Of course both of those are loaded with butter but butter is keto friendly. :) I'll plan my days to be super low carb the rest of the day so I can have soup.

    That said: gumbos are a good thing to make. We very low carb folks, can have our gumbo in a bowl just as we'd have soup. Others can have their gumbo over a bowl full of rice the way gumbo should be eaten.

    I make a version of Rachel Ray's Everything Gumbo with less broth and more chicken, shrimp and sausage.

    Hi!!!! I'm a soup woman too. This soup is simple but it's very delicious. Pulled chicken (I roast wings and bone-in breast), chicken broth, chicken bouillons, green onions, mushrooms, black pepper, 1/2 medium onion, celery, dried oregano, dried thyme, dried parsley, garlic powder, onion powder, 1 cup of shredded cabbage, 2 cups of water.

    All seasonings are to your liking. All veggies are to your liking. I use a whole bottle of 32oz chicken broth and I base everything off of that 32oz bottle.

    Coconut Lime Chicken Soup

    2-3 pounds cooked chicken
    1 can full fat coconut milk 15oz
    3 C chicken stock
    1/4 C lime juice
    1 bag broccoli slaw ( I use this to save time -orig recipe calls for shredded broccoli and carrots)
    2 tsp Thai seasoning
    salt and pepper
    red pepper to taste

    Thai seasoning:
    1/2 tsp curry powder
    1/4 tsp cinnamon
    1/4 tsp ginger
    1/4 tsp chili powder
    1/4 tsp paprika
    1/4 tsp salt

    I tend to add extra seasoning because I like spicy food.

    Soupe verte

    1 large onion
    1 celeri (use leaves)
    1 carrot
    3 large zuchinni
    2 large leeks (I use 2 cups of frozen leeks)
    1 chicken stock cube
    50 grs butter
    Salt pepper
    2 pints water

    Cut all vegs in small chunks
    Fry them in butter gently (do not let get them brown)
    Add water and stock cube, salt and pepper
    Cook for 35 mins and blend.
    So good.

    Lazy "Kitten" Soup
    1 box beef broth (can use chicken or veg.)
    1 piece of ginger peeled and grated fine (size about your thumb nail)
    2 leeks just the white parts chopped
    1/2 bag of the coleslaw or chopped cabbage mix
    Tablespoon of tomato paste (I use Petti because it is in a tube like toothpaste & I think that is more convenient)
    Season with what ever you like.
    If you have cooked meat like ground beef, roast beef you can add. Same with chicken if you are using chicken broth. But you don't have to. It is good like this.
    Put in Instant Pot cook on soup setting. Done in 1/2 hour.
    You can make it on the stove too of course.

    I made a vegan version of this tonight, and it was yummy! I used vegetable stock instead of chicken stock, and instead of chicken, I sauteed tofu in coconut oil until it was crispy and threw that in. My vegan son and daughter-in-law both had seconds. :smiley:
