    I did loaded cauliflower soup yesterday and it was great. Roasted off a head of cauliflower (about 700g), then used 105g cooked bacon, 1 tbsp bacon fat, 55g diced yellow onion, a bouillon cube and 6 cups of water. Salt and pepper to taste, then added 200g shredded extra sharp cheddar.

    A good sized bowl (350g by weight) was 309 cal, 8.4 carbs, 22.6 fat and 18.9 protein. Topped it with a half oz cheese and a tablespoon of real bacon bit. Salted.

    I tend to just do chicken thighs and low carb veggies in broth, but tried this one several weeks ago and found it really enjoyable. Not sure what the exact carb count is...I stopped logging there for awhile. https://simplemommablog.wordpress.com/2013/04/03/low-carb-taco-soup/
