Hog roast on mini crackling plates

Has anyone got an idea of how to make these pork scratching plates at home? Perfect for LCHC canapés.
I mean just the pork scratching disks, as I want to make them and put my own toppings on them at home. The fab stuff I could make for Christmas as low carb finger food if I knew how to get the bases perfect.

The closest I can think of is my experiment frying up sliced "fat back" as its called in the US South. Basically pork skin w/a layer of fat (heavily salted; I rinsed off the salt & dried). Fried it in lard. Very tasty. Perhaps you can find pork skin or fat from the subcutaneous layer and try frying it?

Here's how you'd cook a pig in North Carolina, USA ^^ for the topping (pig/pork). I'm in Eastern NC so we favor the vinegar based sauce and the whole hog. I'm guessing you purchased the Cracklin's (contents in the bag) for the base.0 -
Oops. Now not so sure that is pig on the cracklin' and guessing your interest was how to make the cracklin'. Certainly though, someone will enjoy the Pig Pickin' site and be enlightened by our vinegar based sauce.

Love the pigs on cracking. But none of mine so far looks flat, my plates are more of a work of art lol Just love the idea of making proper LCHF canapés. I can do so much with these cute and OMG tasty pork crackling plates. My other half absolutely loved them even more than I did.

And they have low carb Tiramisu and Mocha fat bombs and OMG this is such a find before Christmas.
