Vegetarian recipes (eggs OK) please..

I notice people who do LCHF diet always have a lot of meat included in their diet. That is their primary food and veggies are sides.
What about vegetarians.. or even eggetarian.. what is their primary food.
I use paneer (cottage cheese), tofu, eggs as primary and veggies on the side.. Anything else I could be using?

Is all dairy OK? Mascarpone has a good LCHF profile. And avocados are great if you do net carbs.2

I freaking love eggs. So let me share some basic egg cookery that we use a lot in our household:
Ive done variations of Eggs in Purgatory for years Nigella Lawson has a good easy recipe: https://www.nigella.com/recipes/eggs-in-purgatory
My kids inhale deviled eggs. I hate making them but....we all eat them and there are some fun ways to do them with avocado, Siracha, and Kimchi. Speaking of avocado, I love baked eggs in avocados. UHMAAAZING. There are so many ways to do it, just google "baked eggs avocado" and a bunch of ideas will pop up.
Spanish tortillas (omelettes) are traditionally made with potato but you can literally use anything and they're a great way to use eggs with veg...or soy or paneer.
my favorite "bowl" ever is 2 warm poached eggs, on cottage cheese topped with avocado, salt and fresh cracked pepper. It's eggzactly what I crave in after a workout.

I actually just completed an egg fast as laid out on the food blog "I Breathe, I'm Hungry." There are some great recipes there that I'm going to continue to use. My favorites are the buffalo omelette and the cream cheese pancakes (which can be adapted for all sorts of uses). If you can tolerate sweeteners, the snickerdoodle crepes are amazing, and I also really liked the salted caramel custard (although I made mine with vanilla instead of caramel because it's what I had on hand).

You have given me some devilish ideas now.. will def try em and let you know how it turned out..

Avocado, scoop out the insides, mix with spicy salsa and refill, top with a squeeze of lemon and some salt and pepper. Yum!
Stuffed eggplants.
A lot of Indian food is vegetarian and suitable for LCHF, swap the naan for opsie bread. Besides Indian food is oh so tasty! My absolute favourite.

Vegetarian cannelloni, use giant leeks for the tubes, cut to the desired length, and gently squeeze out the tubes, fill, top with cheese, oven bake and enjoy.1
