Re-evaluating disliked foods..

There are some foods that I was just "ok" with when I was eating SAD, but that weren't things I would normally say I loved.. Now that I've been low carb and my tastes have changed, I've found that some of these same foods have become some of the foods I crave and love.

I now love green olives and eat them several times a week.

Onions and peppers were always good to me, but now they are a treat, especially when sautéed in BUTTER.

I love coconut oil.. just straight cold pressed coconut oil on a spoon. I just want to eat the whole jar.

    avocado...used to be only good for guacamole...now it's a daily staple on EVERYTHING

    I've found things I'd never eat before, like peppers, I like raw, tolerate cooked. Onions, I can finally eat without wanting to throw up, but raw is still blech unless super finely minced in salsa... Mushrooms, I couldn't stand before, now love them... And Liver - still hate liver and onions, but pate/braunschweiger is garlickly decadent goodness... Just a few...

    As a kid and young adult I couldn't stand beef to be the slightest pink. Totally grossed me out!
    Later on, I began to prefer it medium.
    Since keto, I prefer rare and will actually nibble the raw beef while I'm prepping it.
    Similar thing seems to be happening with eggs. They always had to be cooked through. Then I kinda liked a slightly runny yolk... now even the white isn't hard cooked. Bacon too! Never liked it fatty and chewy before. Always had to be practically burned.
    I also suddenly started liking mustard which I always hated before. I just got curious one day and had some and discovered it's pretty good! Lol

    My "taste" hasn't changed. I still like what I previously liked and still like it cooked the same way. Only difference now is I purposely eat more fat and usually do that just by eating a clump (1 or 2 ounces) of cream cheese or mascarpone. Even before dieting I was never one to purchase low fat products. I just ate less of the full fat versions.

    The one thing I seriously LOVE about keto though is the need for sodium. I previously ate low sodium (had high blood pressure) and it is a JOY to now eat dill pickles, olives, shrimp, crab, keilbassi, cottage cheese, etc. I previously kept that stuff to a minimum.

    Life on keto is grand if we let it be and find the positives!

    Zucchini and summer squash are some of my faves as long as they aren't mushy!

    My favorite find has been roasted radishes. I will never like onions.

    I had zoodles for lunch. Topped with beef stroganoff. It was awesome.

    I don't have a spiraliser, but I have what looks like a vegetable peeler with really sharp teeth that you simply pul down a vegetable to create long thin 'noodles'. I love using it on courgettes (we British use the French name, while Americans use the Italian... go figure!) carrots and sweet potatoes... I simply fry my 'noodles' in butter and olive oil, with a sweated onion, a small clove of crushed garlic, a pinch of chilli flakes, and top them off with creamy cheese.

    I roasted some sweet potato julienne strips in the oven, watching them like a hawk and turning frequently, until browned and crispy. My H actually loved them, he's a hard guy to please, too!
