Will a teaspoon of vanilla (or other) alcohol-based extract kick me out of keto? What are good alternatives?

Every body is different but it doesn't kick me out. I use it in my coffee every day.0

You can get non-alcohol based flavorings (extracts are alcohol based) or you can do vanilla powder (my preference). I think the ones without alcohol are call essence or something else. It's a technical term.
And it really depends on what else you eat/consume that day...as well as how sensitive your body is to that alcohol. You can also make your own extracts with alcohol of choice and vanilla beans.1
