Lemon Cupcake with Cream Cheese frosting

I made these today.

I did not have lemon oil. I couldn't find it in the store. Instead, I found 'True lemon Cyrstallized Lemon' in the seasoning section.

Also, I added a 1/4 tsp vanilla and the true lemon to the frosting.

There was a lot of frosting per cupcake, and the cake was a little dry. So I decided to cut the cupcake in half and sandwhich the frosting.... That fixed it and it fullfilled my craving for lemon shortcake/cookies.

Also, the frosting alone is going to be a mouse for me in the future... yummy.

    Ha! I ordered the lemon oil yesterday after I found that recipe. Planned on making them once the oil is delivered. Good to know on the cake part being a bit dry - I can't wait to make these now!

    everything I've ever had with coconut flour was terrible - however I'm up for just making the frosting...we don't need no stinkin cupcakes!!!

    Also important tip when using coconut flour: ALWAYS sift it!

    Coconut flour can be tricky, indeed! I second your suggestion to sift it. I always use a blend of almond and coconut, as the texture comes out better.
