I need help for easy keto meal options please!

Hi there!

I just started the ketogenic diet two days ago and have had some trouble coming up with regular, every day ketogenic meal options. So far, I've been having boiled eggs and coffee for breakfast and baked chicken and salad for dinner, with an Atkins shake and maybe a quest bar thrown in there. I've also been snacking on walnuts, pistachios and avocado. I feel as though I'm having serious trouble figuring out high fat, moderate protein, low carb options while still getting sufficient calories (So far I need about 1,600 calories/day). I feel like I'm snacking instead of eating meals haha...Any suggestions are appreciated!

    They each also have blogs with recipes.

    I did the Keto Challenge at dietdoc.com. They do up a two week plan including yr grocery list for each week. Loved it although I tweaked some of the recipes as they were a little too high fat. If you are a member they have a number of meal plans available but you can get a lot of ideas for meals, etc without being a member.

    I've only been on this diet for 2 weeks but this is what I've eaten so far.

    Breakfast: 2 boiled eggs (or mashed & mixed with mayo and mustard) with 2 slices bacon (pre-cooked on Sundays) or faux keto oatmeal (lots of recipes online) with 2 chopped strawberries mixed in.
    Lunch: taco salads, keto shepherds pie, chicken Caesar salad
    Dinner: keto pizza casserole, any meat with salad or veggies, burger w/ no bun
    Snacks: pepperoni sticks, nuts & fat bombs - if you're having trouble getting enough fat or calories these will help ( I made double batches of 3 different flavours and keep them in the freezer)

    Here is one of my favorites ...

    Porkchop cooked in a teaspoon of coconut oil and seasoned to my liking. Steamed cabbage with a tablespoon of melted butter and warmed chopped walnuts over the top. Meal is ready in about 30 minutes.

    Remember, you don't have to make it hard on yourself. You dont have to cook something with 15 ingredients in it or have huge amounts of special ingredients that can bankrupt you! Keto is reallly a very easy way to eat if you keep it simple! I learned this the hard way unfortunately.

    burger with mushrooms provolone and tessame blue cheese dressing
    or wrapped with lettuce pickles mustard

    applegate farms turkey slices mustard havarti wrapped in romaine lettuce leaves or just wrapped together

    zuchini noodles in olive oil or coconut oil on side with chicken and parmesan

    scrambled eggs with cream cheese or avocado and bacon [i don't eat pork but others do]

    wild planet albacore tuna in sea salt w mayonnaise mustard franks and chopped pickles green pepper and/or celery for crunch...in a bowl with a spoon our could scoop into green pepper or celery and eat like that...
