5 Min LC Pumpkin Pie filling snack

Hi guys, I just made an amazing LC snack and had to share.

1/2 cup pumpkin
1/4 cup ricotta cheese
1 tsp honey
a bunch of pumpkin pie spice

OMG so good and so filling! It tastes JUST like pumpkin pie filling. I don't do artificial sweeteners so I just put a small amount of honey, but I'm sure splenda would be fine.

I honestly don't know why ricotta doesn't get more love in keto/LC communities. It's been a godsend to me when making food because it's so yummy and makes everything feel fancy.

    That does sound good. I eat pumpkin puree by itself with little sweetener and spices. The ricotta would make it nice and creamy. Thanks!

    I love this recipe because it says "a bunch of pumpkin pie spice." And because it's pumpkiny and presumably creamy. Thanks so much for the idea!

    Ricotta is practically a staple here. I use it for pasta-free spinach and portabella lasagna.

    Glad to see some more ricotta appreciation! A fav quick meal of mine is a few costco meatballs heated up with 1/4 cup ricotta cheese and 1/2 cup Rao's tomato sauce. So good!
