CG - Meal & Snack Suggestions

In the past 9 days I have done 5 CG (Camp Gladiator) workouts (think 1 hour sweat session) not sure who (if anyone) actually looks at what I'm eating/my exercise but still tweaking it a bit.

Basically it was recommended that I follow a 40-30-30 diet and on non CG workouts I eat approximately 1,700 calories and on CG workout days I eat approximately 2,100 calories.

I'm finding the workouts challenging but do able and same for calorie intake. Looking for inexpensive high protein meals and super appreciative of any suggestions. Also looking for afternoon snack suggestions. With high intensity workouts at 6 AM I start to crash mid-afternoon most days it seems.

If it helps, I also am a single mom of 2 kids (1 in high school and 1 in elementary) with an extremely busy evening and weekend schedule. Anything that is easy to throw together in 15-20 mins or less is ideal. Or the crock pot route :)
