    I totally forgot to mention that my son and I had to do flyers in there yesterday, too!!

    Today we're going to the Remembrance Day celebration where we pay respect to our veterans. Later we're going to my moms bday party. She's having a big games night tournament with prizes. Should be fun!!

    I totally wanted junk food last night, but I ended up with whole wheat pasta and broccoli, with some nooch and spices. Yay me!

    My car guy can't get to it until Monday so I rented a car today. It's a 2017 Chevy Cruze with a bazillion lights, gauges, screens and gadgets. I hate it lol.

    Obviously didn't make it to the office today. Been working on a few things from home, but I didn't have much in my briefcase since I didn't intend on working from home today. Going to get to bed super early tonight so I can hit the office super early tomorrow.

    Good for you Mihani for choosing a healthy dinner after the day you had. Sorry about your car troubles.

    I had a major fail in the rice steamer. I have made lentils before in it using the 1:2 ration (1 cup of rice or lentils and 2 cups of water). I was trying a new brand of lentils and instructions stated a 1:4 ratio but cooking on the stove...well I ended up with a lentil type hummus mash...it was good as a dip but not what I was going for to add to my vegetable kabobs.

    Also Brooks and I made the black bean sweet potato chili again for next week. I cut my finger nail while chopping sweet potatoes. Food prep and cooking is finished for the next few days. I am done in the kitchen.

    My name is Lisa, and I just joined this group. I was happy to find it. Today marks 4 weeks since I started this diet, and so far I love it. I need to lose weight, but am also trying to avoid taking cholesterol medication. I see the doctor in 4 weeks.

    There is a lot more food prep than I had originally thought, but I enjoy cooking and have been doing most of the prep on Sundays. My challenge has been salad dressings. I’ve had some wins & fails (I don’t recommend tofu ranch ;) Salsa seems to be my go to.

    I’m looking forward to getting to know you all!

    Welcome!

    I joined the ETL group in October and started the diet in September. The members here have wonderful suggestions. I had my blood checked approx two months after starting. I think I posted the results a page back but my cholesterol, LDL and triglycerides were down quite a bit. Plus no pre diabetic levels (A1c and glucose with in normal). Yay, the meds for high cholesterol have horrible side effects so it was worth it to me to give up on meats, cheese, oils and butter. I still have an egg about 2-3 times a week.

    For salad dressings I use hummus (just started making my own) or balsamic vinegar glaze or both. It was challenging at first but now I prefer my salads this way. Also mashed Avocado works well.

    My best work out equipment and friend is my dog. Rain or shine she is ready to go!

    I saw your results, and wondered how long it took. That’s encouraging to know that 2 months made that big of an improvement, congratulations! I actually attempted an oil free hummus on Friday, but must have added too much liquid, so it accidentally turned into a great salad dressing!

    I have been allowing myself an egg for breakfast on Saturdays & Sundays, and fresh corn tortillas as my whole grain/starch serving a couple of times a week, but otherwise have been following the 6 week plan. Down almost 11 lbs so far.

    My dog Zack is also my best work out equipment! I can’t turn down his pathetic, ‘I need a walk’ face.

    I've been so crazed this weekend haven't had much time to post. I am leaving extra early for the office since I'm leaving early to get the rental car back and pick up my car. I'll bring some work home to do tonight.

    Okay, this is too silly. MFP logged me out and I didn't notice. So I came to the forums a few times and saw no new messages and didn't bother to look further. I finally realized what was going on this morning, and logged in to see 20 new posts! Oops!

    Welcome to the group, Lisa! I'll post one of my favorite dressings below (t-crack). I usually use a dressing that has nuts in it so I'm always having a bit of fat with all the greens. I also like Isa's Green Goddess dressing because it is full of greens and has a TON of flavor.

    Mihani, that really sucks about your car. The whole thing stinks. The inconvenience, driving a different car, and the cost. Fingers crossed that your mechanic can work some magic on the cheap!

    Joe and I are trying to get back into the swing of things. I don't think this will be a reboot week, but I'd like it to lead to a reboot next week. I'm soaking a bunch of pinto beans to make up a double batch of chili and some bean burgers.

    Lemon Tahini Dressing (AKA "T-Crack")

    This dressing has become so popular, we made it into a T-shirt!
    Author Molly Patrick of Clean Food Dirty Girl
    Ingredients
    1/2 cup tahini 110g
    3 tablespoons lemon juice 1 average sized lemon
    2 garlic cloves chopped
    6 dates if your dates are huge or you like it less sweet, use 4 dates, pitted and simmered in water for 10 minutes
    3/4 teaspoon sea salt
    3/4 cup water
    Instructions
    Place all of the ingredients in your blender and blend until creamy and smooth, about one full minute (make sure to drain the water from the dates before you add them to the blender).
    Use this as salad dressing, pour it over veggies, use it to roast butternut squash, use it as mayo and use it to drizzle over tacos and burritos. You can use this sauce for any damn thing and it will be delicious.
    Recipe Notes
    If making this for one or two people, feel free to cut this recipe in half. This sauce will last for about a week and it freezes well.

    Happy Monday!

    Carla, thank you for the salad dressing recipe. I made my red pepper hummus a little thin so once that is used up as salad dressing I am going to try the Lemon Tahini dressing.

    Lisa, Zack has a big grin on his face...it would be hard to ignore that face. I have added cooked carrots, peas and beans to my dog's diet. They loves it and look great.

    I am 2.4 lbs away from my Thanksgiving day goal. Haven't decided what we are going to do on Thanksgiving. We might do a Turkey trot (Brooks running, me walking) and then go out to dinner later...just accept it as one day and enjoy it...the place I am looking at has alternative meals. Not worried about eating Turkey as I am losing all desire for meat. More worried about stuffing, rolls, casseroles and pies and wine. We have no family close by and the few people I have met since we have moved to San Antonio will be with their family so I don't want to cook a big meal that I don't want to eat.

    Good morning. Had a nice long weekend at home with the kids. Found a house that might be a good contender. We're looking into it some more, because we'd have to do a few renos.

    Donna, I was thinking I should have added some peppers to my hummus as I was eating it yesterday. Next time! I am 4 lbs from my Thanksgiving goal, so I'm not sure it's going to happen, but I'm still pleased with the results I've seen so far. We are going to the Oregon Coast for that weekend, so it will be a bit of a challenge.

    Carla - I made your salad dressing last night...it was delicious. Thank you! Both Brooks and I loved it. I made hummus first, then added all the salad dressing ingredients to what was stuck in the bottom of the vitamix. Solved my hummus/vitamix issue. :)

    Limuth - hang in there...having the goal is great but eating healthier everyday is meeting the most important goal and will get you there. I know traveling is difficult but being prepared will help. I have a hard time when going out so I look at the menu and find something that will work ahead of time.

    Mihani - how is the car? Did you get caught up at work? I have the ingredients to make OSG -Glowing Spiced Lentil soup.

    I have been having a lot of hip pain since I took a GENTLE yoga class 4 -5 weeks ago. I bought a gentle yoga dvd this week and am loving it...but the hip pain continues...not arthritis type. It starts about a mile into my walk and then when I get home I can hardly raise that leg to go up stairs. I have to do the stairs one at a time. Really upsetting...I guess I need to make a dr. appt. but doubt I will get in before our trip. We are going to Vancouver for a few days and then to Whistler for a week. Planning on snow shoeing and xc skiing :(. At least both hotels have a pool! It will be wonderful to see that white stuff at least once this season. Brooks was down 2 lbs this morning!!!

    Hey all! I’ve been really busy even for me! Just finished up some work tonight and getting ready to head to bed. I’ve been reading posts but just haven’t taken time to post myself.

    Lisa, glad to have you join the group. Great loss so far! Your dog looks so happy. Food prep can be a pain. I go through stages of really motivated and others of ugh, more chopping. I like to steam big batches of different veggies once a week. As soon as they are tender but still slightly crisp I douse them in cold water to stop them cooking and keep ‘em from getting mushy. They are great for throwing into bowls with a grain and some greens or into salads. I prefer cleaning and prepping my own lettuce, but I rely a lot on container greens lately. I love salsa as a dressing… one of my favorite salads is romaine, black beans, onion, peppers, mango, and salsa.

    I finally got the dressing printed Carla, will be making it this weekend. I’m usually on my laptop when I check into the ETL group and I always forget to log in and copy/save recipes I want when I’m at my real computer. How’d your burgers and chili turn out? Did you finish your shawl project?

    Donna you are still going strong, and your husband is doing great too. Amazing results, and so nice you can enjoy this together. I may need intervention for the glowing spice lentil soup… I am probably going to make another batch this weekend. I will never get caught up at work, ever. I did get my car back though. Hope you can figure out what’s hurting your hip.

    I ordered In Defense of Food (Michael Pollan) … Sabine has often recommended it but I just never got around to it. Looking forward to it coming next week to read over the Thanksgiving weekend.

    Hello! I'm at the new job today; so far so good. :smiley:

    We will probably be putting a conditional offer on the house tonight (conditional based on the quote we get from the contractors), so we are proceeding with this house, for now at least! The contractor is meeting us there tomorrow so we can discuss our NEEDS and our WANTS.

    I didn't swim too much yesterday, I was really having a rough time for some reason. I only got 40 laps in. Then we had to deliver flyers and it was somewhere around -20ºC something with the wind chill. Brrrr. I was frozen half the night. Finally woke up at 3am and took off my socks...

    On the bright side, if we buy the house, my son will be forced to give up the flyer route. I've got my fingers crossed for that!!!

    I didn't eat my breakfast this morning; I was too busy. I had 3 bites of overnight oats, but none of my fruit. Today for lunch I have a big salad. Off to go eat that now. Have a great day everyone!

    Haha... yeah location outside flyer zone is wise Karrie!

    Still grooving on the Dr.McD soup cups for lunches. Breakfasts have been oatmeal with chia seeds and blueberries. Dinners are all over the place. Tonight I had a pita with black beans, loads of lettuce, and some salsa.

    I'm still scrambling at work, things are crazy.

    Donna, you'll be in my neighborhood on your trip to Vancouver & Whistler. Enjoy the skiing and the pool, sounds great. I'm glad you liked the dressing! A salad doesn't always appeal to me, and that dressing helps me get on track.

    How is your car running, Mihani? Hopefully it wasn't too costly to fix!

    My chili turned out good. It's a super simple recipe and I'm always surprised at how good it tastes for the amount of effort. I double the recipe and it still goes fast. When I'm really on top of things, I make a huge vat of pinto beans and use half of them for pinto bean broccoli burgers at the same time.

    Thick and Hearty Pinto Bean Chili

    Servings 4

    Ingredients
    3 large dried New Mexico chiles (you can skip this and the entire first step and add chili powder instead)
    1 1/2 cups water
    1 medium onion , chopped
    4 cloves garlic , minced
    1 bell pepper , chopped
    1 15-ounce can diced tomatoes
    1 8-ounce can tomato sauce (no salt added)
    3 cups cooked pinto beans (or 2 cans, rinsed and drained)
    1 teaspoon cumin
    1 teaspoon oregano
    1/4 teaspoon freshly ground black pepper
    1 teaspoon smoked Spanish paprika
    2 teaspoons cocoa powder (good without as well)
    1 teaspoon salt (or to taste)
    cayenne or other red pepper , to taste

    Steps
    Remove and discard the stems from the chiles. Place them in a small saucepan and pour the water over them. Bring to a boil and simmer for 15 minutes. Allow to cool. Put the chiles and the water into a blender and puree until well-blended. Pour into a strainer, pressing lightly on the pulp to get out all the flavor. Throw the pulp away and reserve the liquid.

    In a large non-stick pot, sauté the onion in a little water (1 tablespoon to start) until it’s beginning to brown. Add the garlic, bell pepper, and a little more water and sauté for 3 more minutes. Add the reserved chile sauce,
    tomatoes, tomato sauce, beans, cumin, oregano, black pepper, and paprika and bring to a simmer.

    In a small bowl, mix the cocoa powder with 1/4 cup hot water until it is well blended. Add it to the chili. Taste for seasonings and add salt and red pepper to taste. If it seems bitter add 1 tsp sugar. Cook on low for at least 30 minutes to allow flavors to blend.

    Is it Friday already??? Week flew by. I am 0.6 lbs from my Thanksgiving day goal. I keep expecting the weight loss to slow down but last week from Friday to Friday I lost 3 lbs. I did have a stall two weeks ago but contribute that to eating out and salt.

    Today I am making the Glowing Spice Lentil soup. I am picky about my vegetarian bullion and the only place I can find it is on base at the commissary. Just bought it yesterday. The big chain grocery store only has chicken or beef Better than Bullion.

    Carla - Next week I will try your Thick and Hearty Pinto Bean. It is suppose to get down to the 40's as a low this weekend. I am so over this warm weather. Yesterday the high was in the 80's. Carla do you recommend any vegetarian restaurants In Vancouver or Indian restaurants? I am very excited about this trip. Even though it is out of season we are going to take the ferry to Victoria Island and stay overnight. I found a beautiful Dale of Norway sweater in a consignment shop that I took my too big clothes into. Perfect condition and fits. I have always wanted one of those sweaters but too expensive. I can't see it ever getting cold enough here to wear it but am taking it to Canada.

    I am ready to switch from canned beans to pinto beans. Carla do you have any tips?

    Karrie - which house are you thinking about? Happy to hear the new job is going well!

    Limath - How is it going? Peppers added to the hummus are delicious. I was at a middle eastern restaurant yesterday and they sprinkled cardamom on top of hummus. It was good. I think the food was really clean because it is the first time going out to eat that the next day my weight was not up. We like a place called Zoes Kitchen, lots of delicious vegetarian dishes but I think the food is heavily salted.

    Mihani - Let me know what you think about Defense of Food. Did you buy the OSG's cookbook? I was thinking about it but after buying ETL cookbook and the Persian Stew fiasco I have been hesitant to buy another cookbook.

    I didn’t post about it last night because it was too fresh, but my last uncle on my mom’s side died on Tuesday. I just found out last night, and it was too late for me to arrange to drive over 3 hours each way to go to the funeral this afternoon. I have had a rough day. That’s the last of my mom’s family gone now. I didn’t feel so bad last night, we had been expecting the news since he was very ill with cancer, but I woke up this morning and started crying and I’ve been weepy all day off and on. I think it brings back the feelings of loss when Mom died, which was 26 years ago now. Anyway, I told my boss I needed some “me” time, so I left the office a little after noon and going to chill for the rest of the day. He was fine with that (he should be, I work 7 days a week lol) and I’ll be working all day tomorrow and Sunday. It just seems like these deaths of family and friends have been hitting too frequently.

    So anyway… I went to the grocery and going to make black bean tofu enchiladas for tonight. Also got stuff to make the chili this weekend (finally) and a double batch of glowing spice lentil soup later this week.

    I should have checked the forum before I got stuff to make chili, Carla. I could try that recipe. I have a standard chili I make, which is really just my old “throw it all together” chili from way, way back when I ate meat, but now I use a variety of beans and some mushrooms instead of ground beef, and of course lots of green pepper and onion. No measuring or consistency in what spices I use, but it’s always good. The car is okay, and I didn’t get charged because I have a credit balance with my mechanic. Whew!

    Donna, I use the Kroger organic or Pacific brands of veggie broth in most of my soups. They are both good I think. On my one and only trip to Vancouver a few years back we went to http://www.nuba.ca/ … lots of vegan options and the food was fantastic! That is so great you are almost to your Thanksgiving goal. I feel confident you will make it by then!

    As to the OSG cookbook, the first one a resounding YES!!! It is my go-to cookbook. When it came out the entire ETL group sounded more like an OSG fan club than an ETL group lol. The second one, while I have liked the few recipes I tried, for some reason just didn’t resonate with me as much. I don’t flip through it and think oh I simply HAVE to make that in the same way I did with the first one. I think Angela is absolutely gifted when it comes to soup, and they can all be made ETL friendly by leaving out the oil. I have made nearly all of them from the first cookbook multiple times and love them all. The Tex-Mex Casserole is awesome, as are both versions of the noodle bowl, and the protein power goddess bowl. She has a lightened up version (less oil) of the goddess bowl on her website which is the recipe I use. I have tried to make the goddess bowl dressing with no oil, and sorry to say it's just not the same.

    I’m off to make enchiladas, haven’t had lunch yet so I’ll have a late lunch/early dinner, and then I think a nap is in order.

    Mihani - I am so sorry about your uncle. Losses can be cumalitive and I admire you for taking some time off for yourself. Hugs, I lost my mother 15 years ago and I still think or her and miss her.

    Thanks Donna, felt a lot better today. I know what you mean, I think of my parents daily, but time does heal.

    Spent about 7 hours at the office then to my brother and sis-in-laws's for her birthday, we just had munchies and wine. Was nice to be with family. Not a very ETL evening though. Back to the office tomorrow, we're still really scrambling on several things that I need to get finished up.

    Donna, I think you can get pinto beans in cans, but for cooking them from dry, I use an instant pot. They'll probably go on sale on Amazon as a Black Friday special if you're looking for one. I don't have experience or advice for cooking them on the stove, sorry! Wait, one thing, if you are adding salt you don't do it until they are mostly cooked, otherwise they stay hard??? heard that, i don't add any salt anyway.

    When do you think you will have the shawl done Carla? And definitely can get pinto beans in a can. I went through a stage of cooking from dry but I'm too lazy of a cook to do that often. Maybe if I had an Instant Pot. I found so many bags of beans that I had cooked from dry and frozen that I had to throw out when I did the freezer overhaul though. Eek!

    I got my books today. I have In Defense of Food, Dr. F's End of Diabetes (I half-*kitten* read it a while back on borrow from the library on kindle, but I don't like reading books like that on kindle) and Vegan Richa's Everyday Kitchen. The pictures look amazing... can't wait to try out some recipes!

    Carla - How were the burritos? The recipe looks delicious. I wish I could knit and weave. I enjoy beading and my sister came up with a cute design she wants me to try but I have not found all my tools since the move.

    Mihani - I agree it is much easier to use canned beans. I do rinse them and try to find low salt. I thought it might be healthier to make my own.

    I reached and passed goal today losing an extra lb. Brooks has his PT test today. He always passes the run, pushups and sit ups but the waist measurement has been his biggest challenge. He has to be 39" or less....he was 38.5 yesterday when I measured him and he has lost 18 lbs on ETL. He is 8 lbs away from goal. He agrees that this is not just a diet but a change in lifestyle. I am reading Eat for Health. There are 3 stages of eating and I think we are doing the second stage and losing weight.

    WOOHOO!!! Great job on reaching your Thanksgiving goal, and early even Donna! You and your husband both are really rocking the ETL lifestyle. How did his PT test go? Eat for Health is friendlier to real life I think, and still super healthy! I agree cooking beans from scratch is best, and I also rinse my canned beans, and really I think they taste better from scratch too. Like Carla mentioned, I don't add any salt at all when cooking my own from dried. I'll probably try to make some more this winter and freeze them like I did before.

    Work is still super busy and crazy, and I am so looking forward to Friday in the office alone to do some catching up.

    Thank you Mihani! He passed, his waist measurement was 38.5. He did the run, pushups and sit-ups required and ended up with a 92%...anything greater than 80% is passing. We went to a salad bar type place for lunch. It was really delicious.

    We are celebrating tonight with a glass of red wine. We went for a 12 mile bike ride and then played 90 minutes of tennis against two men so I am exhausted. Dogs will get a short walk tomorrow.

    I do like the phase two...having meats 2-3 times a week keeps Brooks happy. We are going out for Thanksgiving dinner and going to go for another bike ride Thursday a.m.

    Good morning! I'm too busy to get caught up, it'll have to wait until things settle down.

    I've been at my new job a week now. Loving it!

    We put an offer on the house last Thursday. They countered on Friday and we accepted. We have been frantic all week trying to lift the conditions and trying to de-clutter 13 years worth of junk in our house so that we can list it on Tuesday. We have been go-go-go!!!

    So I'll probably be MIA for another week while we get everything ready to move. Wish us luck on selling our house - I really don't want to carry 2 houses for months on end. I told my realtor (only half kidding) that he has 3 days to sell our house for us... :wink: I told him I can't keep it clean longer than that. Lol.

    OK, gotta run. I'm still training at the new job, I have to meet with my old boss today to help him with some things, and I still have swimming and flyers tonight, too. I told my son I'd wait until the house is officially ours before I give notice on his job. So we still have at least 3 weeks to go.... *sigh*

    I am not as sore as I thought from the bike ride and tennis...it seems only walking really bothers my hip. I bought a gentle yoga dvd and that is helping. We are going on a 15 mile bike ride Thanksgiving morning and then walking dogs on short walks before and after dinner. I am going to try not to stress about the dinner but I don't want to undo all our hard work.

    Breakfast - berry smoothie and grapefruit
    Lunch - salad + hummus and carrots.
    Dinner - sweet potato chili or minestrone soup

    Donna, your Thanksgiving plans sound very healthy and fun! I tend not to get too fussed over holiday meals. It's one meal, and it's not like I don't do a cheat meal or have some alcohol every week or two anyway. Relax and enjoy!

    That said, I do plan to get back to basics from Friday through Christmas Eve (or maybe Saturday since my brother and his wife will probably send me home with leftovers tomorrow). I have been feeling like my blood sugar is out of whack lately and need to get it together and lose some more weight. I am going to start reading End of Diabetes tonight and put that plan in place for the next few weeks.

    Happy Thanksgiving to our U.S. ETL'ers, and Happy Thursday to the rest of you. I slept in, going to do a load or two of laundry, then to my brother and sis-in-law's for food and wine and laughs. I hadn't felt up to posting about it before, but we lost another family member the other day, my aunt on my dad's side, she and my dad's brother were married for over 50 years. Glad to be spending time with family today to share some memories. I am feeling pretty beat up by these losses.

    I skimmed End of Diabetes last night, and read quite a bit of it more in depth, going to spend some time with In Defense of Food when I get home tonight. End of Diabetes is mostly same recommendations as ETL, but there is a lot of information about diabetes (go figure) and how it an be reversed or prevented. One thing kind of jumped out at me. He said exercise is the prescription of choice for diabetes, and that he always asks new diabetes patients how many days a week they don't take their medication. They almost always say never, and then he will ask why they don't only take it sometimes. He said they look at him like he's crazy. The point he's getting to of course, is that making excuses or "forgetting" to exercise is just as crazy, and that the exercise is more important to long-term health and avoiding Type 2, and combined with a nutritarian diet can reverse it and get you off the medications.

    Let me know what you think of In Defense of Food, Mihani. I have the End of Diabetes and find it good. I hope you have a good time with your brother and sister-in-law. It's nice to have family around to share those memories and to just be together.

    Joe and I are staying home this holiday. At the last minute yesterday, we decided to plan and shop for a Thanksgiving meal for two (plus leftovers). We're making an Oh She Glows lentil loaf, some mashed potatoes & cauliflower with mushroom gravy, and ginger glazed carrots. Before that sounds all too virtuous, I should add that I'm probably going to make her pumpkin maple pie too. I like that it is served cold and can be stored in the freezer.

    Donna, congrats to you and your husband! It's so great that he's viewing it as a lifestyle change and that you can be on plan as a team. I have a hip injury from yoga that is from 2 years ago, and walking always seems to make it sore. Let me know if you end up trying that Dharma restaurant. It was a few years ago that I went so hopefully it is still good!
