Happy Thanksgiving!
I love this Mihani: The point he's getting to of course, is that making excuses or "forgetting" to exercise is just as crazy, and that the exercise is more important to long-term health and avoiding Type 2, and combined with a nutritarian diet can reverse it and get you off the medications.
This is so true. Exercise is so important.
Mihani I am glad you have family for support after losing another member. I lost my father the Sunday after Thanksgiving and it is always a time to remember him.
Carla - did your hip ever heal? I use to go to a wonderful yoga class. I thought I would start off in a gentle yoga class and it was anything but gentle plus we were packed into this little room like sardines. I am enjoying the DVD gentle yoga I got. Bicycling does not seem to affect the hip...just long walks and stairs.
Karrie - congratulations on finding your house! I hope you sell your house. Moving is a great time for cleaning out and getting rid of stuff.
We had a nice Thanksgiving. I made us berry banana smoothies for breakfast, nice walk with dogs and then Thanksgiving dinner with friends. We ended up going to some friends of friends house that we have met before. They had Thanksgiving dinner planned with a couple who was killed in the church shooting two weeks ago. How sad it that in this crazy world? We had a wonderful time with them. There were lots of fresh vegetables and I made roasted brussel sprouts. Did have a wonderful pecan pie made with Texas pecans...to die for. Big bike ride and tennis for tomorrow and back on plan tomorrow.

Need to get moving to the office here pretty soon. I figure since we are technically closed there was no need to get up at 5 a.m. and get to the office so early today.
Going to start my day with a bowl of oats, blueberries and chia seeds with a few walnuts. Lunch will be leftover glowing spice lentil soup. It's not ETL compliant with the coconut milk, but have a few more bowls worth to eat over the next couple days. Will have a big salad for dinner. Need to stop and stock up on greens and veggies for the week.
Started on In Defense of Food, it's really good so far.

Made it to the store yesterday. Think I'm all set for the week. I'm having a late lunch/early dinner at a vegan restaurant and I'm sure it won't be fully ETL. Best get moving to the office. As usual I just can't seem to get out the door early on weekends.

Maybe I enjoyed Thanksgiving a little too much...I was up 2lbs next day...I don't think it was calories/fat I, I think it was all the salted foods. I am down 1.5 lbs of that gain. Had a marathon tennis match yesterday and thought I would be really sore but seem to be ok except the hip pain.
Brooks is making a minestrone soup that is ETL compatible. Hope it turns out better than the persian soup from ETL cookbook or else he might get discouraged. The recipe is from an old Vegetarian cookbook that I love.
Did I mention how much I loved the glowing spiced lentil soup? I would be making a batch today but Brooks has the kitchen today. I am going to double the recipe using a regular can of coconut milk and a light coconut milk can. The week I had it I still had a good weight loss even though it is not ETL compatible.0 -
Glad you liked the soup Donna! I love it too, and it is so easy to throw together. I think I could probably almost make it from memory now lol. That's a good idea to use half full fat and half light coconut milk in a double batch. I'll try that next time. Hope the minestrone turns out well. I'd definitely recommend any of OSG soups, always good. Most of them are going to fit with ETL if you just leave out the oil. The red lentil kale and the tortilla soups are two favorites that are compliant.
This was my first truly on track day in a while. I had no tic tacs, no blue corn chips, no snacks, ate meals. I wouldn't say it was 100% 6 week plan because I had more starches but pretty darn close.
B - 1/4 cup oats heated in the microwave with water and frozen blueberries, topped with chia seeds and 4 walnut halves, side of an entire package of super spinach sauteed in water with garlic and ground pepper... 5 ounce package cooked down to about a cup and a half of greens
L - a Dr. McDougall's split pea soup cup (I am going to keep using these for lunches until I get around to a soup marathon and restock my freezer), steamer package of broccoli and cauliflower with nooch and black pepper
D - I seriously enjoyed dinner. A small serving of brown rice, cheezy chickpeas, rainbow chard sauteed in water with onion, garlic and pepper. Also a few spears of steamed asparagus since I made a batch plus one of broccoli to have on hand. Going to have some strawberries for dessert in a little bit.
Had a short day in the office yesterday but put in a longer one today. Left around 3:00 and ran to stock up a few more packages of greens. I have more work to finish up tonight so I better get at it.

Mihani - well done with being on track. I am glad it is Monday for me to get back on track. I am down 1.7 lbs from the 2 lb gain after Thanksgiving.
B- peanut powder, banana smoothie
L - Minestrone soup
D - Roasted vegetables, brown rice and chickpeas, maybe small salad
Exercise - tennis 90 minutes, 30 -60 minute walk with dogs depending on hip.

The recipes all turned out good! The loaf was more work than I realized, but with the 2 of us, it lasted a long time. The carrots were so easy! Next time I'd double the recipe. Good flavor and they tasted 'special' enough to fit in nicely with a holiday meal.
I think your McDougall soups are a fantastic idea for you at work, Mihani. I forget, do you order them online? I think I need to find a few healthy heat and serve type items too. Not because I'm too busy, but because otherwise I eat other heat-and-eat items that aren't healthy.
Donna, my hip hasn't healed. I was doing a hip stretch (the frog one, probably not the technical name ) and it was uncomfortable and I stretched too far and couldn't ease out of the position as quickly as I wanted. I'd never had hip trouble before that day, but it has been an issue ever since. I should see if there's something I can do to help it heal. The injury was at home while watching a yoga vid. I'd done many hot yoga classes beforehand and had no trouble.0 -

I need to try that lentil walnut loaf one of these days Carla. I've had it bookmarked ever since I got the cookbook, but I always decide it sounds like too much work just for me. Maybe I will make it to take to Christmas dinner.
I ordered the Dr. McD soups from his website rightfoods.com/. I had compared and even with shipping they were cheaper than amazon or the grocery (if you buy in 6 packs) although I imagine I could shop around and find better deals. Now that I've ordered I get emails with special deals too. I have liked all of them except the chicken flavor ramen which was meh... the miso ramen was really good. My favorites are black bean, split pea, and pad thai so far. I am going to order some more here soon and try some other varieties. They are quick and easy for work lunches definitely. I had one today with an apple and filled me up.
B - leftover chard and some steamed broccoli, same oatmeal bowl as yesterday
L - Dr. McD black bean soup cup, apple
D - sauteed greens with onions and mushrooms, leftover rice and cheezy chickpeas
I had to get my car into the shop so I left early to pick it up. Going to work here at home which I hope will be better than this morning in the office. It was crazy today.

Carla - that is too bad about your hip. I wonder about stretching...after hearing your story I think I will do yoga after I walked dogs and I am a little warmed up.
Mihani - The minestrone soup was great! I have never had a bad recipe from this book. It is called The Best Ever Vegetarian Cookbook...it is not totally vegan although some of the recipes are. How is the new book?
Very bad day today...did not feel like cooking so we went to a place called Zoes Kitchen. They have vegetable kabobs.

Between vacation, Thanksgiving and my birthday, I’ve been a bit off track. My son came home from the Navy to surprise me for my birthday, and we’ve had a great time though! We did an Escape room yesterday, and it was a lot of fun.
I’ve discovered that I have to be careful going too far off track, as my tummy doesn’t seem to respond well. So, today is my last day off work, and I am planning a food prep day, and looking forward to it!
Carla, I have dates on my shopping list to try the dressing you suggested. I’m also going to make a mango/avocado based dressing I found on Pinterest with a few modifications. I made it once before, and it reminded me of honey mustard dressing.
I’m looking forward to getting back on track all the way!1 -

Hi Limath, glad to see you! That's really nice your son was home to visit for the holiday. The mango avocado dressing sounds good.
I need to get dinner and up to my home office for a couple more hours work. I managed 20 minutes on the treadmill and about 10 minutes of strength work last night with fairly light dumbbells. Ugh I have lost a lot of my strength slacking off. I really think I'm going to have to make myself work out mornings. I never know if I'm going to get stuck late at the office and evenings are too iffy.

Hi,
Mihani - good job with all you work to squeeze time on the treadmill. I need to start with weights again. I could whack that tennis ball again. I came down hard on my foot playing tennis and felt it all the way in my injured hip.
Limath - my heart burn dissipated on the ETL diet. No longer need antacids at night with less meat, oils and cheese intake.
I have been off track a bit. Ordered a sandwich at Zoes Kitchen instead of my usual that was extremely high in calories. For dinner I got back on track with roasted vegetables, chick peas, and the Trader Joes lentil madras. I lost the Thanksgiving day gain but not anymore.
Tomorrow:
B - Fruit Smoothie
L- minestrone soup and small salad
D - roasted sweet potato and ???? the roasted vegetable/lentil mix? No, Brooks is taking it for lunch tomorrow. HMMMMM....will have to think about this.

Quick check in today. had pinto bean chili for dinner yesterday and we'll finish it off today. Simple and healthy, just what I need right now.
Thanks for the info on the soups, Mihani. They have a 15% off sale going on at the McDougall site so I ordered 2 of each of the quinoa salads and a sampler pack of soups. (actually forgot about the 15% off sale and used a 10% off code for being a new subscriber! doh!)

Quick question - have any of you ever replaced eggs with aquafaba in a recipe? I'm thinking about trying it for fruit & oatmeal muffins, but am a little scared!

Ouch Donna... hope your ankle feels better soon. I have the same experience when I'm eating right, no heartburn is good.
I haven't tried the quinoa salads yet Carla, let me know how you like them.
Limath, I haven't tried the aquafaba egg thing but the cheezy chickpeas recipe you don't drain the chickpeas and the aquafaba helps make them thick and saucy. Usually I drain and rinse my beans.

Another busy day late in the office, but boss is off in the morning for 6 glorious days of letting me catch up a bit I hope. I am planning to bring some files home tomorrow and work from home Saturday, back in the office Sunday.
Took advantage of Dr. McDougall's 15% off sale (plus free shipping) that ends today. I think lunches are covered for close to 2 months. Just have to add a salad from home or a bag of frozen steamer veggies. I like broccoli or broccoli/cauliflower mix. I top with some nooch and ground pepper, and sometimes maybe a little soy sauce or balsamic, they aren't bad, not as good as fresh steamed of course. The steamer bags with carrots I don't like. I love carrots, but once they have been frozen then steamed they are icky, in my opinion anyway.

Tomorrow I'm finally, really, making my big pot of chili and cornbread. I have a couple good recipes that are oil-free and use whole wheat flour.

I made my black bean sweet potato chili. Tomorrow, I am baking a double batch of OSG spiced lentil soup. We have friends who moved from Alaska to San Antonio staying with us for a few weeks. We leave for Canada next Wednesday!!!

Nice job Donna! How is your ankle? I made a pot of chili tonight, it was very good. I have a ton of leftovers may have to freeze some. Didn't end up making cornbread though. I should, but I'm lazy that way. I think peer pressure I got you addicted to the OSG glowing spice lentil soup lol. I did make cashew sour cream to top my chili though.

Hi, I tried doubling the recipe and used one can of light coconut milk. I could tell the difference, not near as thick and creamy, I should have cut the broth a bit.
Ankle is fine now. Hip is okay as long as I take motrin prior to long walks or tennis.

Oh bummer, was hoping you would say that using half light coconut milk made no difference.
I finally made the chili last night. I used the OSG recipe ohsheglows.com/2014/02/05/my-favourite-vegan-chili-with-homemade-sour-cream/ with a few variations. Green pepper rather than red, quite a bit more chili powder and cayenne, added a can of black beans and a large can of crushed tomatoes to what was called for in the recipe. This is a really thick and hearty chili. Also made a batch of cashew sour cream to top it with chopped green onion.

Mihani - two days later we had it leftovers and the lentil soup had thickened and tasted delicious. I think I may have added too much broth when I was doubling recipe and that made it thin. Also before I put it away I put 1/4 into vitamix and then added it back in. It was much better. I would play with it. It does cut calories to use the light coconut milk.

I made a WFPB potato corn chowder recipe that Joe and I both enjoyed. I followed the Instant Pot instructions and it was super simple. My food is hit or miss lately. I make healthy food when I do cook, but I've been punking out a lot and getting unhealthy takeout. My McDougall soups and quinoa salads arrived yesterday, and the plan is to have them replace the takeout. I'm looking forward to trying one today for lunch.1 -
Carla, I've been punking out a lot too. Too much. Time for me to get back on track too.
The house sale was long and tediously drawn out because of the bank's comedy of errors, but it was completed last Wednesday (FINALLY!). We are on track to take possession on Friday morning (already!!!). My hubby is going to go do the walkthrough in the morning, and have my lunch ready for me when I get there at noon so I can check it all out too. But then after that, we probably won't spend much time there until mid-January...
We are not moving into the new house until mid-January sometime. We are getting some renos done before we move in. And with the holidays, a 3 week job turns into 4-6 weeks because they get 2 weeks off (rightly so) during the holidays. But I want my new house and I want it now!!
Our house is up for sale now, and we have 2 open houses this week. On Wednesday we have a Realtor open house for the other agents to come see it, and then on Saturday we're going to have a public open house with signs all over the neighbourhood. I hope we are accepting an offer by Sunday!! WISH US LUCK!! If we have to move into the new house while they do renos, we can, so if we do sell right away, there's always that option.
The new job is going well, but it's REALLY busy. I might turn into Mihani!! It's a good busy, though, because I get a request, I complete a request. move on to the next one. Not like my last job where I might work on a project for months and months with no end in sight. I really like to put a checkmark next to stuff to show how productive I am. Feels good!
I have my physical in mid-January, so I really want to get back on track with my eating. I want to lose 10-15 lbs before I have to face the doctor.
So with that in mind, I am going to give myself a 10 day challenge. Smoothie for breakfast, big salad for lunch, and a soup or a stew for supper. See what 10 days does for me. Hopefully have enough momentum from that to motivate myself to do another 10 days. Then after Christmas day, I could do a 3rd set of 10 days before my appointment. I could theoretically make a lot of progress...
So tonight will be a make a list night, and tomorrow will be a prep night for the first 2 soups and a couple days' worth of smoothies (I can't run the blender at 6am when everyone is still sleeping, so I'll have to make them in advance). I'm going to make the OSG Red Lentil & Kale soup, and then a Moroccan chickpea soup that is really more of a stew. I think these are my 2 favorite soup recipes, so that'll make it easier to stick to the plan.
Anyhoo, sorry for the rant.

The corn chowder recipe looks good, Carla… will save that one. Which McD soup did you try? I have liked all of them I’ve tried except for the chicken flavor ramen. It was pretty blah.
Gotta get busy and get to bed early. I am doing a 2 hour online training session tomorrow morning with a guy for some new software we bought. I want plenty of sleep so my brain cells are all wide awake for it.
