Low carb / keto slow cooker and freezer meals

I'm trying to get more into meal prep and planning and I think freezer meals would work great for my family. Problem is, a lot of them are pasta based or have some kind of thick heavy sauce. I see a lot of suggestion for ziti, lasagna, etc.

Anyone do meal prep using either the slow cooker or freezer meals? What kind of stuff do you make? I'm not strict keto, but as I try to keep <50 net carbs / day, I try to stay under 20 or so per meal.

    I do 20 carbs a day so this fits into my macros great :)
    Here are just a couple meals that I’ve made. I have plenty more but thought I’d post a couple for you.

    Mississippi Roast is a good one...

    Chuck Roast - 3-4 pounds
    1 packet ranch seasoning mix
    1 packet au jus graving mix
    1 stick butter
    5 pepperoncini peppers

    salt and pepper

    Salt and pepper the roast. Pour everything else on top. Cook on low for 8-12 hours. Shred roast and stir sauce.
    Serve.

    I love doing this on it's own... Can do it with broccoli as a side, riced cauliflower, whatever. Sky is the limit...
