Motivation For a Busy Soldier

Hey!
So I used to be a vegan. For years. I was really into it. Then I had to go to a 2 week training and unfortunately they didn't accommodate for my diet, and now here I am as a vegetarian.
I can't seem to get back into veganism, but I so desperately want to. I want to eat fresh foods again, but I'm reclassing and study Arabic for 7 hours a day. I just don't know how to prepare foods to take with me, and am really short on time.
I guess what I'm looking for is either an accountability friend, helpful tips, or motivation. I need to lose 5 pounds to be out of the overweight category, but just can't seem to get there.

    Well I’m a vegetarian who is trying to eat more vegan food. I’ve decided to really cut down on processed food - which includes Quorn which was my veggie staple diet! You are obviously very busy. Can you pack up rice/couscous, chopped up peppers, cucumber, tomatoes etc as a packed lunch. When I was teaching I used to have this often for lunches. It was quick to make.
