Favourite Easy Food Prep Meals

Hi ladies!
I was wondering if you had any favourite meals that you make in big batches for the week ahead. I try to make 2 batches of something on the weekend so I have easy lunches and dinners when I'm working. I usually look for ones that have lots of veggies and if they have grains, I make sure they're not the main feature. Like for a pasta dish, I make sure I have as much, if not more veggies than pasta. Sometimes I'll add rice to too recipes, but again, I make sure it's never more than the veggies.
Here's a few that I've made and liked:
Garlic Chicken Veggie Pasta
Balsamic Chicken and Veggies
Italian Sausage and Veggies
Shrimp Fajitas
I think this week I'll do one with spaghetti squash and meatballs with marinara sauce. But I was wondering if anyone else had batch recipes to share! Let's make a collection!

I just made a bunch of egg, spinach, cheese, bell pepper (idr what else) muffins for the week. They can be frozen or kept in the fridge if you're going to eat them within a few days. I grabbed two this morning, popped em in the microwave, and bam! 70 cals each and very tasty.0

Thanks for the links — I’m going to try those. This is a favorite easy recipe and last all week. It’s still chilly here so I’m still making it.
