Hi everybody!
I'm not the kind of dude to eat onions and spinach together with my eggs, but WOW... what a difference!!!
The flavor is GREAT, and the fiber that the sprinach brings to the table is phenon...
It's nothing new... but if you happen to get stuck in a 'eggs for breakfast' rut... this helped me!
Pretty much every morning, I make eggs (and often bacon). I notice that I do get hungrier then i'd like around lunch. So, I wanted to add a little fiber to the meal to help fill me up... so, if you are looking for a simple way to spruce up your eggs, why not try this?
1 quarter of a whole diced onion
(roughly) 1 cup of frozen spinach
2 - 3 eggs
Butter for awesomeness
Saute onions in butter, add frozen spinach.
If you like your eggs scrambled, then just scramble and throw in.
If you are like me and like you eggs over easy/medium, separate the yoke from the white, lightly beat the whites (they'll spread through the spinach onions better), throw the yokes on top.

I don't eat breakfast, but I had something similar for lunch...
toss butter, garlic, and sliced fresh mushrooms in a pan - I used 6 baby portabella
saute a bit
add fresh spinach
saute a few more minutes until the spinach wilts
dump into microwave safe bowl & take to work
heat for 90 sec
add 2 eggs and scramble them
heat for 60 sec
mix
heat for 45 sec
mix
Super delicious...but I wish I would have tossed in a generous pinch of parmesan as I think that would have enhanced the flavor.1 -
