Guys, really try these buns if you can stand a little wheat

@AbbieOffman showed me this recipe and wow. Game changer. These buns (says the recipe makes 12, I think it makes 9, so even with 9, they are 2.3 carbs each!) I used to do those Carb Balance wraps when I wanted a sandwich. These are better and homemade and seriously take five minutes to whip together (bake for 18, recipe says 20, too long). I tried them last week and they didn’t inflate but I used only egg whites because I didn’t want them to taste eggy. This time I used whole eggs and wow did they puff up! I’m enclosing a photo so you can see. They remind me of popovers or Yorkshire puddings - maybe my favorite high carb food (at 14 carbs each for a much smaller one!) Worth a try if you can eat vital wheat gluten and a little flour. That is a full size dinner plate not a saucer!     They look (once baked) so much like Idaho potatoes sitting on the foil, lol.

    Thanks for linking it. :) I was surprised to discover I felt no desire for them ... I guess its years of celiac and very low carb. ;) LOL

    Cut in half, toasted with Munster cheese on top in the toaster oven and put together like a grilled cheese they are delicious! It’s what’s for breakfast.

    Meanwhile my husband just walked in with HIS breakfast. Lol, he eats a bigger breakfast than me every day but this looks good! Egg and cheese sammich with a braut on the side. I might steal a bite... I had to take a photo. f7lzxmb5vi8y.jpeg

    My last batch didnt turn out so well. Maybe my egg whites (from container) were off...

    I'd throw in the advice that they freeze too, i find i cant eat a whole batch before they start to turn....

    I tried to make hot dog shaped rolls and they didn't raise at all. I think I poked/prodded them too much.

    Abbie, I found out if I use only egg whites they don’t rise as much. I use whole eggs and they aren’t too eggy! Also I’ve found if I bake on rainy days they don’t rise as well. So... no baking today! Maybe tomorrow. @AbbieOffman

    I used whole eggs, but, i also used the hand blender...I was being lazy. if I make a batch this weekend I think I might try the recipe exactly - with the 1/4 cup of reg. flour.
