Butter bombs

This is a quick snack when I'm trying to get my fat intake up.

2 Tbs Golden Irish spreadable butter
1 Tbs ground flax seed
1 Tbs seasame seeds
1 Tbs chia seeds
1 Tbs coconut flour
1 Tbs cocoa - I like Penzeys natural high fat cocoa.
1tsp Swerve sweetener

Mash everything together with a fork until you can easily whisk the ingredients smooth.

Scoop out into 1 tsp size balls, then let them stiffen up in the refrigerator for a half hour.

The seeds give a crunchy quality and provide both fiber along with healthy fats.

    Side note: I don't always wait for them to firm up and eat it like low carb icing instead.
