Lunch ideas for weird Lenten/diet jump-start restrictions

Hey! First-time joiner, first-time poster. I was doing well for about 2 years and then hit a wall last summer. I'm now back to where I started. Anyway, I could use some help.
I'm trying to come up with interesting lunch options, based on the following restrictions:
- Wheat allergy (actual allergy, non-negotiable and not gluten, specifically wheat - oats, barley OK)
- No booze (this is lunch, so... whatever)
- Vegetarian or pescetarian preferable; for lent I'm cutting myself to 3oz of meat per day, and my family is not, so dinner is my "meat" dish. No restriction on dairy.
- Air fryer available in the office, but can't cook fish in it out of respect for co-workers
- Big fan of all foods otherwise... (nuts, hummus, weird veggies, etc.)
Anyone have some ideas to share? I made air-fryer vegetarian stuffed peppers today, if anyone wants the recipe.

I usually have a large, loaded salad for lunch. I was making soups for breakfast for awhile and switched to oatmeal but here's a few of my favorite soups from winter:

The chipotle powder is really good in it and I used a medium-hot chili powder from Penzey's that was excellent though it was almost too spicy for me!0 -
I make my own flaxseed bread from nutrition refined blog recipe. I’m not a baker. This bread is too easy to screw up. Then I can make little sandwiches or just a snack plate and it’s super filling. Not sure if you do dairy, but I like to pair it with cheese and fruit and veggies.

Im all for salad too.
I take salad with Smoked salmon in the side or Tuna salad as topping.
Sometimes with no protein or hard boil egg.0
