eggplant noodles are pretty legit

they're the closest thing i've gotten to real noodles, probably at a 5th of the calories of wheat
it's pretty simple, especially if your eggplant is bitter, make sure to salt it
then just julienne it,i don't have a julienne peeler so i just hand chop them into discs and cut into general noodle dimensions
then you just need to saute some garlic/ chilli/ other seasoning in 1 tbsp or less of olive oil
dump the noodles in and stir fry till soft, should lose a bit of its crunch and become noodle-ish
season as you would noodles, soy sauce etc

Oh YUM. I have been thinking about how to lighten up this recipe, and I'll bet doing it as noodles instead of fried spears would work great!

For my small summer garden, I am growing 2 eggplant 🍆 plants. Last Friday, chopped up eggplant, zucchini,green pepper to make Ratatouille, and froze some of this.0 -
