Happy Wednesday!
Last week we stayed at a cabin in the mountains.
We tried to keep our cooking simple and yet eat healthy. I found an ‘eggs for dinner’ recipe that worked well for us.
It was a Mexican egg scramble comprised of eggs, onion, cheese, black beans and a can of Ro-Tel tomatoes/Green chilies all cooked in one pan. It was simple to make and relatively nutritious as compared to going out to eat.
Do you have any favorite easy 'throw together meals' that you take on the road with you when traveling?7 -
Your 'eggs for dinner' recipe sounds really good - and I love the all-in-one-pan idea! I'll have to try that one!
I don't have "meals" per se, but I always take along snacks for eating while in the car! Otherwise I find myself "hangry" and eating whatever is available (which is never anything 'good' for me!!)
Some of my "go to's" include: baby carrots, my own "trailmix" -> nuts/raisins/dried cranberries mix, my own peanut butter bars (no bake, and I can make these up in about 5 mins and then refridgerate them!), grapes, apples, boiled eggs, cheesesticks....3 -

Exercise: Frustratingly no. Volunteered at daughter's school for a tiring large part of the day and then started work after that. Did not manage to fit in any exercise, which puts me out of contention for the winner's circle.

(pass days 4/3 to date) Can't think of a go to travel meal at the moment but have always liked those eggs all in vegetables dish mixes too (absolutely no idea what Ro-Tel is though)4 -
@znaoiec - those eggs sound delicious! And what a great way to manage food while on vacation. In my case, since hubby does all the cooking, when we vacation, we do pack breakfasts and lunches but we always eat dinner out. Typically I start out making great choices, but by the end of vacation I’m eating and drinking too much, and buying donuts at the gas station.2

Exercise yes short bike ride but several short cardio workouts

I could only fit a short bike ride this morning -down to the shops with a small diversion – as I had to get my booster covid vaccination at 11.30. Now my arm is a bit sore but otherwise fine.
When we go away in my motorhome we take breakfasts and usually have a light lunch out. I take a dish that I have cooked and frozen – often a cottage pie – and my boyfriend contributes a ready meal that just needs to go in the oven. I do have a good size oven and four gas rings on the hob.
When we go abroad self-catering we buy local fresh fruit and veg as much as possible but often have to resort to tins of meatballs, quick cook meat etc. with pasta.
I presume Ro-Tel tomatoes is just a brand name for tinned tomatoes?

We take all our food for our trips or day outings even before CoVID.
Healthier & prevents my Restaurant Meal addiction (Ie more salt, more fat, more sugar & larger portions) from rearing it’s ugly head !!
The secret is having effective cooling AND for us, taking a couple of our home-grilled boneless skinless chicken breasts. Cleaned ready to eat veggies, fruits, dark chocolate, nuts, canned tuna, drinks, some bread, sometimes peanut butter or plain yogurt.
Works for us. It took a few outings for me to realize I actually preferred eating our regulars while parked looking over the ocean or sitting on a hillside or in a redwood forest.
Our one exception is we will usually get a nonfat decaf latte & a croissant while on the road (and often at home too.) They don’t trigger the hunger in me.
Heather from Half Size Me has an excellent post on handling trips. I figured out our system after listening to it & refined our process over time (as she recommends.)
And yes I take my food scale.
And if staying overnight, I take our weight scale.
As I always say, “It’s just food.”4 -

Traveling is a neat concept. LOL! Not to say I haven't done so, but it is exceedingly rare, and never easy. The last thing I am concerned about is diet at such times. I figure it out when I'm there, and get back to normal when I'm back home. I'm definitely interested to hear what people do though. I figure that one day I may actually do such a thing.4 -

My throw together travel meals are usually non messy travel foods like ceral bars apples water nuts. We don’t travel to far as our family and friends are in the area.
I tracked logged and did some last minute yard work…leaves and dog duty ran the stairs for some cardio and did spin 3.2 miles in a hard under 15 minutes no snacks tonight4 -

✅✅✅ Exercise tonight was 30 mins on the treadmill and 10 mins on the rebounder.

After work I met hubby and a realtor to look at a house for sale. It's out by his hunting property, but not quite what we're looking for. After that, we went to dinner. By the time we got home, it was dark and I couldn't walk outside.5 -

Sounds delicious @znaoiec. Frozen cooked ribs were always my first day travel dinner. I would make the sides too and pack them in foil containers. Easy meal for hub to look after on the BBQ while we finished organizing the camp or cottage.
