For Stage 2 and beyond, I've made Butterfinger Protein Pudding!
1 chocolate protein shake
2 tbsp Sugar Free Butterscotch Pudding Mix
2 tbsp PB2 powder
Mix in blender, pour into individual servings and refrigerate0 -
I have a couple of go-to recipes from the blended and soft stages!
Buffalo Chicken Dip/Spread:
1- 10oz can chicken, drained
4oz fat free cream cheese
2 Tbsp Frank's Red Hot sauce
1/4 c low fat mozzarella cheese, shredded
1/4 c low fat cheddar or cheddar blend, shredded
1 Tbsp light ranch dressing
2 Tbsp fat free plain greek yogurt
Mix all ingredients together, and if in pureed stage- blend in food processor or blender. Warm in microwave if desired. (Delicious hot and cold!)
Protein Pumpkin Ricotta Mousse
1/2 c part skim ricotta cheese
1/2 c pumpkin puree
1 Tbsp sugar free vanilla instant pudding
1 packet splenda
1 scoop protein powder
1/2 sugar free whipped topping (cool whip)
Combine ricotta and pumpkin until smooth. Add dry ingredients and mix well. Fold in whipped topping.0 -
This isn’t so much a recipe as a collection of ingredients that go together, but I just got these chicken mozzarella meatballs from Sam’s. I used 1 tablespoon of Rao’s pizza sauce, and a tablespoon of part-skim mozzarella on top, 3 meatballs in a ramekin, then microwaved it for 1 minute.
It ended up being 17g protein, and about 200cal with the cheese I added. The only hitch is the meatballs are 12g fat per serving. But not super crazy! It was the most satisfying thing I’ve eaten since surgery.
