Diabetes and food allergies

I am struggling with finding food I can eat that I am not allergic to. Anyone have any good meal recipes?

    I do not have the most varied diet. It basically consists of roast meat or something cooked in the instant pot - just in its own broth. I have a few veggies I like, and typically have those steamed. I do like sauteed squash and roasted brussel sprouts. I am a fan of sardines and cheese sticks for lunch when I am busy.

    I make a good cole slaw, and that is probably the closest thing to a recipe I have, and it is not written down.

    What are your allergies?

    I am allergic to fish, nuts milk and eggs. Most fruits give me a mild reaction.

    Roast meat and steamed/sauteed veggies may not be the most exciting, but they would work for you.

    On Sunday I usually put a pot roast in the instant pot with some water and sliced portabella mushrooms. I don't add seasoning packets or anything. This is a good one for me, and it is very easy.

    I like to cook a pork shoulder and after a meal or two for us, I will chop the rest of it, get the fat off the drippings in the pan and put the drippings with the chopped meat in a pot with a little water and a couple of shakes of xanthan gum. It makes a great pork and gravy to serve over cauliflower rice. This one I season with cajun seasoning.

    It sounds like you could eat any meat and veggies. A nice roast like 2t9nty suggests with lots of veggies, I would add potatoes, because I like potatoes with a roast.
    Chicken stir fries. If you're not allergic to tomatoes or tomato sauce, a big batch of spaghetti sauce or veggie and beef soup is good. I'm sure you can find lots of recipes on line. Good luck.
