Chickpea Salad from Heaven!

Mix the following is a small bowl:
3 Tbsp extra virgin olive oil
3 Tbsp lemon juice, from 1 large lemon
1 garlic clove, pressed or minced
1/2 tsp sea salt, or to taste
1/8 tsp black pepper
Then chop up the following:
1 1/2 cups cherry tomatoes, halved
1 English Cucumber, halved and sliced
15 oz chickpeas, or garbanzo beans, drained, rinsed
1/2 medium red onion, thinly sliced
1 avocado, sliced
1/4 cup cilantro, chopped
4 oz feta cheese, diced
Pour the dressing over the top, mix really well and put in fridge to chill for 1-2 hours allowing the taste to combine. Even better on day 2!

I make something simular to this all the time. I keep it in the fridge to have as a snack. Sometimes I put it over a little spinach and arugula as a salad. I chop up the avocado into chunks and normally omit the feta.
My dressing is ~1tbsp light mayo, 1 tsp olive oil, and a squeeze of lemon juice. The liquid from the tomatoes give it enough moisture, it doesnt need that much oil.1 -
