    Just got home from the office. I was so tired last night I went to bed before 8:00 so I was up super early and got a good 7 hours in today. Having a day in the office to myself on the weekend, seems like I get more done than a whole week when I'm constantly interrupted and distracted from what I'm trying to do. I brought work home so I can cook and do laundry, etc. tomorrow while working from home.

    I may have a bean burrito tonight myself, Nanc. I have peppers and onions to saute and could load those into an ezekiel tortilla with refried beans and lettuce. Nom nom.

    Yesterday I rode the bike for ten minutes. Will try that for one week snd increase it by five minutes each week

    Great job on the bike, Nanc. Your fresh bowl sounds really tasty.

    I have been struggling with stress and working long hours so I haven't prepped my greens and beans stew that I planned to make this weekend. Tonight, I really need to do something with all these fresh greens that I bought. Had to toss the carrots because of the recall. I'm tired of our food being contaminated.

    At least I'm continuing to treadmill and I'm mostly eating well, just not much variety of veggies and fruit and definitely in a rut.

    This has been a rough week at work. Going to be in the office all weekend again. Have had people off and crazy stuff as usual. Managed to get up early enough to hit the treadmill this morning though. Missed yesterday just didn't want to get up. Mostly eating oatmeal, fruit, big piles of lettuce in ezekiel tortillas with good foods dip. No time or energy to do much else. Also have had a couple forks over knives entrees this week. Those are really coming in handy these days and love that they have no oil.

    Did pick up stuff to make tacos this weekend. I have got better about making the baked shells from corn tortillas. The first couple times I tried it they fell apart. Trick is to nuke 'em for about 15 seconds first then bake.

    Sorry bout the sh8T storm at work, M! Truly not good that it seems that the load always falls on you. Good job with the TM. I am having a hard time fitting everything in...like bike on days I work. I was sleeping better until today. Got up and prepped my breakfast and lunch. Dinner will be easy as you will see in my menu.

    Yesterday, catered TG lunch for the employees. One lone vegan in the group...ME, out of 100 peeps. I think the the rolls were the only possible option. LOL. I brought my own food. And truly, never would I expect there to be anything but the normal TG fare. A few people were concerned about me...and I assured them I was ok.

    The time/energy thing is a real issue for me too, Nanc. I slept in until 6 am this morning and decided to skip the treadmill until this evening. I want to be at the office by 9:00 and stay until at least 4:00. That should get me caught up enough to work from home tomorrow so I can get laundry done, etc. It's definitely going to be 7 days a week for the next while because there is so much to do coming up on year end.

    I have bounced up 3 pounds which is discouraging. Stress and the snacky salty, lack of activity, etc. Need to stick to super simple that's always best for me.

    B - ezekiel english muffin with a smidge of PB
    L - oats with berries, cinnamon, chia/flax
    D - tacos (refried beans, lettuce, tomato, onion, good foods queso, salsa)

    Just got home from the office and did a quick run to the wholesale club on the way home. Got a bunch of frozen steamer veggies. Going to make a big pot of rice and just take steamer veggies and rice for lunches the next couple weeks. I am too busy to think about cooking and want to make life as simple as possible for myself from now until the end of the year. I am not crazy about the frozen veggies, but mixed with rice, sprinkled with a little nooch and bragg's, not bad.

    I stayed at the office too late yesterday and didn't have time for errands, laundry and other chores, so now to get on laundry. I did manage to make the tacos though, and looking forward to leftovers as soon as I get the laundry started. Didn't take time for lunch so I am hungry!

    missed yesterday...hit the sauna, then sprouts and then Soul Cafe in Scottsdale to meet up with my family...wonderful day...walk in the park with niece and her husband and five year old...she found someone to play with...just a nice time.

    today, waiting for AC/Heating guy to give unit a tune up. then Lulu and I are heading over to my sister's

    tomorrow lunch there picking up vegan banh mi sands

    Still having ugly days at work here. I am trying to keep myself on track with healthy habits regardless. Really glad I found the Forks Over Knives entrees they sure are coming in handy lately.

    So where is everyone...just sweet Mihani and me? Did everyone else leave the country? Very weird,

    Lulu had another great day running around in my sister's yard...that does it...I will be using SniffSpot* on my days off...she does not play fetch, but she does run for the ball and occasionally gets it. She rarely, if ever, brings it back...but at least I can get her to run.

    The little one (my five year old great niece) also took her for a walk both days. Stella just loves Lulu and the feeling is mutual.

    Today...back to work.

    1. AC/Heating is still working...using it this morning to take the chill out of the house.
    2. So grateful that I work 3 miles from home...and that I have a job. Not everyone does.
    3. Grateful that I can afford to put food on the table and pay all my bills...not everyone can.

    Oh brother...up in the middle of the night...AGAIN!

    I am bringing the small Gardein Tur'ky deals...not the roast, not the patty, but the other whatever it's called. Mashed sweet potatoes, cranberry conserve (Ina Garten's recipe...been making for over 20 years)...and veg? not sure.

    Oh, and a pumpkin bread and Daiya Pumpkin pie for dessert. I might make stuffing...not sure. I am in the mood for all naughty TG fare. This is a huge Thanksgiving celebration this year...and I am not sitting this one out.

    Not much else going on...back to work on Friday...next day off will be Christmas...very happy about the day it lands...I am off Sun-Tues and Christmas is on a Wednesday. Four days off in a row. Yay me!

    Not much happening here. We picked up a special Plantage Thanksgiving feast that will last us at least 2 days. Today we're going to hang out, relax and be thankful :)

    Sounds like a good time, Nanc and Carla. We put Thanksgiving off until Saturday here so I'm just hanging out at home and brought some work home to do. I plan to go in the office for a while tomorrow. I'm just feeling super lazy so far today and have been puttering around doing a lot of nothing since 6 am. Going to have some lunch then get up to my desk.

    Going to make a big pot of rice tonight and start the veggies/lettuce/rice bowls that I planned. I have probably 20 bags of frozen steamer veggies so salads will be easy with lettuce, steamed veggies, rice, and pickled onion. I'll just have to come up with a dressing or sauce each week.

    Work today...weekend looks good for catching up and decluttering a bit...just getting ready for a housekeeper next week. I am hoping she works out. There are a few things that are just too difficult for me and I do need the help. She is coming next Sunday.
