    Thanks for getting December started, Nanc.

    I made a big pot of half red and half purple rice yesterday and a batch of pickled onions so salads are easy this week. Will be lettuce, chickpeas, rice, onion, a bag of steamfresh veggies, tomato, a spritz of bragg's and some nooch. Figure on dividing it out between lunch and dinner. Still going to be oats with all the usual goodies for breakfast.

    Treadmill this morning 1 mile.

    Just half a mile this morning. Didn't want to get out of bed. Salad made, having a juice (Green Thyme from Fresh Thyme) and a couple walnut halves for breakfast.

    Really enjoyed the salad yesterday. The steamfresh veggies aren't so blah when they are all mixed in with other things and it sure makes it easy to have a big variety without a bunch of prep work or anything going to waste when I can't use up what I've prepped.

    Nanc, you got me thinking about sweet potatoes. Haven't had those in a couple weeks. Will add to my grocery list.

    Last time she said I had the very very beginnings of cataracts. Let's see how I do today.

    Very motivated this month. No real Christmas ...niece and her fam will be in Spain (her husband is a Spainard)...so just Christmas eve or day with my sister...just a short visit...I want to be with LULU!

    ETA: Eyes have not changed much...barely anything so no new glasses. Eyes still very healthy and no cataracts so far.

    Yay for no cataracts, Nanc, and making lots of juice.

    Mile on the treadmill, salad packed up ready to head to work. Need to get back at some strength training in the evenings a few times a week. Going to look into tai chi also. I always enjoy that and it has been quite a few years since I have done it. There are a few places that offer classes around here.

    She is always so upbeat and inspirational.

    Had a pretty decent day at work. Getting back to consistent treadmill in the mornings makes such a difference in how I feel all day. More energy, less stiff joints, better mood. Kind of makes me wonder why sometimes I slack off. :p

    Nanc, I loooove japanese sweet potatoes. I just bake them, slice, and eat them plain. The slices seem like cookies so sweet and delicious. The skins aren't bad either, which is nice because I don't like the skin on regular sweet potatoes and always remove it after baking.

    Morning mile done, even though I overslept. I have been a lot more flexible about getting to the office in the mornings lately and adjusted my arrival time to between 8 and 8:30. I figured if I'm not getting out of there until 6 pm or later then I'm not going in so early. Plus I really like having time in the morning for a leisurely cup of tea or two, treadmill, packing up lunch, maybe making a smoothie or oats, although this week I'm just having green juice and a brazil nut and a couple walnut halves for breakfast.

    Love your new attitude about giving yourself some time in the morning for YOU and to do the things that keep you on a healthy path...love it. Keep up the good work.

    I need to stop at Trader Joe's after work. I need spinach in my life, DAILY. I might have mentioned this before, but years ago an Indian doctor told me spinach was key to keep things moving. He was right.

    I haven't seen jicama lately, Nanc. Wish I could find some it's delightfully crunchy and sweet. Are you still sauna-ing? How's Miss Lulu?

    I did great all week despite the stress and pressure at work. At least a mile every morning, so I'm well over my 5,000 step goal every day since I'm starting out 2,500 to 3,000 before I leave for the office. Lots of real food, no junky stuff. Some ezekiel toast or wasa crackers here and there were my only non veggie starches.

    Worked really late tonight though. Didn't get home until after 7:00 and I am not even sure I want anything for dinner but maybe ezekiel toast. Mostly I just want to go to bed because I need to get back in early tomorrow. People off sick this week which isn't helping. End of the year is so busy.

    Thinking I am going back to either tofu scramble or just egg. Most likely Tofu scramble...just need to get extra veg and then make breakfast burritos. Not happy with the oatmeal.

    Lots of green juice and pears today. Some other vegan stuff...not that great ... enough said.

    I used to make tofu scramble all the time, Nanc, and for whatever reason haven't made it in a couple years. I should put that on my list of things to do soon.

    Still love my oats, but I have found in the past that I do better if I save my starches for dinner.

    I only spent about 5 hours in the office. Felt brain foggy and out of sorts. Going to take a nap now I'm home.

    Overslept by a lot so I'm going in a little late. I know better than to hit the snooze. I usually sleep right through the reminders. Plus I was up late last night working on a file and I haven't been feeling 100% so probably an extra bit of sleep was what I needed.

    Made it to the sauna today...boy does it help everything...sleep, aches and pains, positive outlook...I just need to get back to the routine of going early in the morning before work. It's so worth it.

    Back on oatmeal. It really does keep me going throughout the morning. And you can't beat the flax and blueberries as add-ons.

    Had 3 oz of fresh spinach today...steamed. Seeing if that is enough to keep "ME GOING".

    Finally broke down and bought an air fryer. The Ninja that I was figuring on went on big sale Cyber Monday. It arrived today so I tried some broccoli first which turned out okay. I think maybe I left it in there a smidge too long so some pieces were a little dry, but mostly it was good. I tossed with a little coconut aminos and added a bit of water to the bottom of the tray to keep some moisture in the air fryer. Then I tried some chips made from corn tortillas. Those were so good fresh and crispy and warm. Yum! Perfect no oil treat for when I want a crunchy snack. Can't wait to try some tofu next.

    Glad you got back to the sauna, Nanc.

    I am still feeling a little blah so I'm heading to bed early.

    Sauna is great...but they cannot seem to get the temp right...sometimes, off...sometimes on but not worth it--just not hot enough, sometimes, beyond scorching...and sometimes just right. Grrrrrrrr...

    Having a tough time...been this way for over a month...not sure what is going on...but just trying to push forward and let this mini depression run its course. -sigh-

    Finally feeling more like myself this morning after not feeling well for several days. Back on the treadmill after skipping two days. I actually left work on time yesterday, came home and just about went straight to bed.

    Slept great, but up at 2...darn it anyway. Prepped lunch for the next four days...made the tofu scramble...so that's ready...just add fresh spinach and mic it ... oats ready ...so prepped for four work days.

    I take elderberry daily...gummies from Garden of Life Organics-Amazon. Hoping they keep me healthy this winter...last year I was out for two weeks with upper respiratory infection ...and boy was I sick. e5biiww9i55a.png

    I can't remember her name...some plant based lady doc on YouTube...she recommended them. They work when you take them. So, I am not missing a day this year. Just remembered, Dr. Pam Popper!

    happy hump day!

    Off to the dentist for a cleaning and then going into town to pick up our meals for the week. We're getting half orders lately because I've been having gal bladder issues so I am having as little fat as possible and there's no way to tell how much fat is in the prepared meals.

    I'm getting lab tests done on Friday, just the twice yearly diabetes and thyroid check but I am sure my blood labs won't be good. The asthma related mold prevented me from exercising and now I'm totally out of the habit plus we are having a wet and dreary fall. I am hoping I can stay off additional meds and get myself back on track.

    I hope you enjoy your new air fryer, Mihani. We love ours and use it every day.

    Breakfast was an Ezekiel raisin english muffin with a raspberry fruit spread.
    I will have some broth with veggies later today, and then I have some plant ravioli with a bit of pasta sauce ready for dinner.

    I've been taking the same elderberry gummies for a few years now, Nanc. I have been sick a few times but nothing that has taken me totally down. I'm guessing eating better overall probably helps the immune system.

    Hope all went well at the dentist Carla. What's on your menu this week?

    I couldn't sleep too anxious about work. Was there until 7:00 last night. So I got up and hit the treadmill, going to have a cup of tea and head back in. The end of year sucks. I say that a lot, because it's true!

    Good luck with your labs, Carla! I just saw some kind of Disney production-type ad for some Type 2 meds for diabetes...all well and good, until they tell you the side effects. Hoping you are able to get the numbers right without meds.

    My tofu scramble turned out so good...did not look like the gal's on youtube. I really like her...she makes all this food and has her parents try it...they are so adorable...I'm in love with the Indian culture...especially the parents...so loving.

    Up and a mile on the treadmill done. I settled into an easy routine this week with food. Just having a glass of green juice in the morning with a brazil nut and a couple walnut halves, oats with berries and chia/flax and cinnamon mid-morning, huge salad in the afternoon. If I do that I don't need much if any dinner which is good when I'm getting home so late. Salads are so easy with a whole bunch of lettuce, half a can of chickpeas, pickled onions, and a bag of nuked steamfresh veggies, plus some rice or sweet potato. Delicious and filling.

    I'm going to try to make a little time to play with the air fryer this weekend. Need to get some tofu.

    Yay on your routine. Years ago, this gal worked at the dealership...she ate the same exact lunch every day...I totally (in my head, poo poo'd her)...how could she do it. Boy, was I ever wrong. It makes life so much easier...I might change things up a bit on veggies but the basic meal is really working...

    scrambled tofu with veggies and a whole lot of fresh spinach, heated for lunch or dinner and voila...perfect and sooooooooooo good. That scrambled tofu has so much flavor.

    That's funny, Nanc. I was just like your co-worker with the same lunch every day at the office. That was 10+ years ago now. But I enjoyed it well enough and it was healthy and easy.

    Good plans for the week, Mihani. Fantastic job continuing with the treadmill. Not too much time left until the new year, you can do it!

    Over time, my coffee habits went from sugary lattes, to just coffee and cream, to coffee with non-dairy creamer, to black. Once I stopped with dairy, that was pretty much the end of my expensive Starbucks habit. Yesterday I was in the grocery store with a Starbucks and got an Americano. Oh my goodness! I could taste the difference between my regular drip and the Americano. And it was flavorful and really a treat even though it didn't have any sugar or cream.

    Blood labs and some little errands in town this morning.

    Mornin' all, been a busy weekend so far and heading back to the office this morning. Plan to stop at the grocery on the way home to pick up more lettuce for the week, plus I'm low on frozen berries, and I want to buy some tofu to try in the air fryer and also planning some chickpeas. I have made crispy chickpeas in the oven a few times but they should be easier and faster in the air fryer.
