I'm not sure why I haven't started a Feb challenge yet! I think b/c it's snow season here in Maine, plus I've been busy with my Hogwarts challenge, and buying journals for my goals for this year, and getting back to the gym, and lining up PT for my injured (chronic, not acute) knee, and also signing up for some classes IRL - wellness classes (Functional Fitness Tuesdays and Thursdays), and Excel & Powerpoint classes at the local college. Plus reconnecting with an old online buddy who I bumped into on Facebook, during my Prolon FMD Fasing weeks (the only time I go to FaceBook, heh). AND learning about and starting a few Conqueror Virtual Challenges!

Anyways, my attention has been split, but I've still been taking pix of my hunts for freggies. Unless I actively think about it, I don't eat them ๐Ÿคทโ€โ™€๏ธ.

So here's a post I made in another group, just copy/pasting to get February started!


Showered, and cozy clothed! Sipping my 2nd protein tea of the day. I got a good snow clearing workout in. I downed 18z of water when I came in, and a plate of fruit (banana, orange, kiwi). Then I hit the shower. Eric is making us onion - red pepper - shaved steak - provolone cheese flatbread rollups. He picked out a movie for tonight, Companion. I haven't read what it's about yet.

We missed the matinee (too bad, I do love a deal, lol) b/c of snow clearing, and doc appts for hubby. (Lab - Vit D check, and eyes - he's T1 Diabetic, so it's important to get them checked every year. All good, no diabetic retinopathy!)

I'm over 20k steps for today. Good thing it's a Quidditch week~! lol We have more snow coming Wed into Thu, and Sat into Sun. Still have more to clear up tmw, but most of it is done. Hubby did 2 snow clearing sesh's this am.

    Brunch today! Avo toast (1/2 avo, 1/2 tbsp each olive oil, lime juice, smoked paprika), olive oil fried diced tomatoes (canned, 1/2c) & egg (1); romaine lettuce 2c, 1 svg each walnuts, feta, chopped pitted dates, coconut vinegar drizzle ... are you guys bored of seeing my avo toast & greens yet ๐Ÿ˜›๐Ÿคฃ

    I just renewed my 4-wk "Unbreakable Vow" for my Hogwarts challenge:

    Last four weeks of challenge:

    I'm renewing my previous vow ... this remains a focus / 'area I don't do unless I'm intentional about it' for me, so ~

    "I solemnly swear .... to get at least one full servings of GREEN freggie at least 4 days per week."

    I did meet/succeed in my "Unbreakable Vow" for the first four weeks, but just by the skin of my teeth! If I'd gone up to 1 full serving of greens 5 days a week, I would have failed. I was just updating my tracking spreadsheet, b/c you have to 'claim' your points tomorrow, full points-partial points-no points, depending on how you did. The tracker isn't complete, b/c today is the last day of the challenge, and I still have to eat my freggies and nuts :D, but I'll make sure to get a Green, an Other, and a Nuts, etc today :).

    I don't know if this will be too small to see, but I did take a screen shot. It kinda/sorta looks like there might kinda/sorta be a pattern emerging. At the beginning of the week (starts on Mon), it seems dodgy as to whether I'll get a green serving in. Towards the middle of the week, I 'buckle down'. Then I seem to miss Saturdays, and come Sunday, I am def trying to make it to my 4 serving goal by the end of the week :p.

    It may appear as tho 'Other Freggies' and 'Nuts, etc' are not an issue for me, but that's misleading. I was as unlikely to eat any color freggie as I was to eat a green freggie, before this challenge, and the same with nuts (except, I did always like beans of any kind, and often did eat those). It just seems like I'm more resistant to adding in anything green than I am to adding in any other color, or a serving of nuts. ๐Ÿคทโ€โ™€๏ธ

    So, what I really want to do today, Miss @SafariGalNYC , is to express my appreciation for you again, for this challenge, and for your inspiration. Without you and this, it'd be an ugly mess, that's for sure ๐Ÿ˜ฌ๐Ÿ˜ฃ๐Ÿ˜๐Ÿคฃ


    Anyway! ๐Ÿ˜ So, today will be an avo toast/diced tomato/egg/greens/walnuts/dates/feta/coconut vinegar day. It's an easy way to get FOUR servings of freggies in! Then I just have to find one more, to hit my real goal, of getting in five freggie servings a day.

    Monday check-in! ~

    I did not wait until mid-week to get my first green freg ๐Ÿ˜‡! I had avo toast, diced tomatoes, egg, pitted dates, walnuts, and feta .... buuuut, we're out of greens! ๐Ÿ˜ฌ. I had a grocery order set to pick up this morning, but we've been snowed/iced in since Sat night. Two plowguys blew us off! (My husband calls them plow dicks, lol). One of them was a full-service, national (regional?) super expensive ($279!) all the bells and whistles deal that we pre-booked on Sat night, for Sun 9pm. (PlowzAndMowz.com)

    They promised a path to the side door, a path around the back, clearing off 2 cars, and salting to boot! Never showed. Quite polite updates a few times, saying, sorry, job's not been farmed out to a provider yet, we'll update you when we have a contractor to do the job!

    Anywayyyy, I had some asparagus in the veggie drawer, so I sliced up 4 spears and threw that in with the diced tomatoes, to olive-oil char/fry. It was a totally different 'vibe' without the greens, and with the asparagus, but that's okay. I'll take it.

    And! Some rando guy knocked on the door this evening, and offered to do the plowing for $55. Score! Saved $225, and we can get out!

    I can go pick up my grocery order (with my greens!) tmo, thankfully.

    It's gonna be cooold here this week. Super windy today, and single digit (F) lows all week.

    Oh! And rotisserie chicken, more diced tomatoes (2 svgs), and ricotta/parm/provolone/cheddar (mild & sharp) cheese flatbread pizza tonight for dinner. Hit my five, and got 2 green freg in, to boot. Plus walnuts! ๐Ÿ‘

    EatingWell pushed out a notification for a roasted parmesan-crusted parmesan a couple weeks ago that looked fantastic, but I haven't tried yet. Yours look even better. How were they? :)

    Thinking about getting a dehydrator to make broccoli crisps without the cheese.

    Another recipe I found:

    Broccoli Egg

    Broccoli- 1 cup
    Peas - 1/2 cup
    Corriander to taste
    Red chilli powder - to taste
    Onion - 1 whole
    Pepper - to taste
    Eggs 3

    Make a base of pulsed greens/broccoli - mix with egg whites to hold together - drop yolk in the center.
