Mix the following is a small bowl:
3 Tbsp extra virgin olive oil
3 Tbsp lemon juice, from 1 large lemon
1 garlic clove, pressed or minced
1/2 tsp sea salt, or to taste
1/8 tsp black pepper
Then chop up the following:
1 1/2 cups cherry tomatoes, halved
1 English Cucumber, halved and sliced
15 oz chickpeas, or garbanzo beans, drained, rinsed
1/2 medium red onion, thinly sliced
1 avocado, sliced
1/4 cup cilantro, chopped
4 oz feta cheese, diced
Pour the dressing over the top, mix really well and put in fridge to chill for 1-2 hours allowing the taste to combine. Even better on day 2!

I make something simular to this all the time. I keep it in the fridge to have as a snack. Sometimes I put it over a little spinach and arugula as a salad. I chop up the avocado into chunks and normally omit the feta.
My dressing is ~1tbsp light mayo, 1 tsp olive oil, and a squeeze of lemon juice. The liquid from the tomatoes give it enough moisture, it doesnt need that much oil.2 -

I make a chic pea salad with,
Chic peas
Green onions
Celery
Red grapes
Mayo (I need to find a lighter substitute)
A lil mustard
Dash of dried dill & poultry seasoning.0 -

I do something similar with chickpeas or cannelini beans and I mix in a can of (drained and flaked) tuna. Add dried dill or not. Very yummy and high protein

            Mexican 3-Bean Salad & Variations.
Ingredients:
- Beans:
- Black beans (likely canned, rinsed and drained)
 - Kidney beans (likely canned, rinsed and drained)
 - Chickpeas (garbanzo beans, likely canned, rinsed and drained)

 - Vegetables & Aromatics:
- Corn (kernels, possibly fresh, canned, or frozen and thawed)
 - Red onion (thinly sliced or finely diced)
 - Red bell pepper (diced or thinly sliced)
 - Avocado (diced)
 - Cilantro (fresh, chopped)

 - Possible Dressing Ingredients (implied by a salad):
- Lime juice (for acidity and flavor)
 - Olive oil
 - Salt
 - Black pepper
 - Cumin (ground)
 - Chili powder (optional, for a Mexican flair)
 - Garlic (minced, optional)

I am thinking that you could replace the lime juice with Red Wine Vinegar, and add some sweetener (Equal, Stevia, or Agave Nectar) as an alternate dressing.
