I thought we could post some recipies that help us reach our goals and that our kids and husband will eat as well. I have an awesome one for a homemade peanut butter bar...I'll post it later.

I must go shower,,,mega sweaty!!!!

    Great idea! Someone made reference to healthy mac and cheese muffins... That would be a score in this house.

    Lemon Shrimp & Angel Hair Pasta

    1 lb shrimp (or more depending on your family size) raw, thawed
    1 box Angel Hair Pasta
    Olive Oil
    Lemon Juice
    Lemon Zest
    Melted Butter (1/2 stick)
    Salt & Pepper

    Shrimp:
    Preheat oven to 400 degrees.
    Lay shrimp out on cookie sheet (I put them on foil on the cookie sheet to make clean up faster)
    Drizzle with olive oil, salt, and pepper. Toss to coat.
    Cook in the oven for 8 minutes or until the shrimp are cooked thoroughly

    Pasta:
    Drizzle olive oil in pot of salted boiling water.
    Add pasta and cook until al dente, about 4 minutes.
    Reserve 1/2 cup of cooking liquid and drain the pasta.
    Mix the pasta with the cooking liquid, melted butter, 1/2 cup of olive oil, lemon juice & lemon zest to taste.

    Top the pasta with the shrimp and you're ready! I made this Friday night with some vegetables for a side & it was pretty good!

    I love skinnytaste.com I also have found alot of really good recipes on Theloveofcooking.com. all the recipes arent lowcal but alot of them are, the sweet and sour chicken and the black bean soup with roasted peppers are my favorites.....YUM

    As a mother of three I have to make pancakes at least once a week. so i began using Fiber one pancake mix and I add one mashed up bannana and 1 cup of frozen blueberries to my mix. My kids call them my smoothie pancakes lol! i give them each 2 three-inch panckaes and use I can't believe its not butter spray (0 calories per serving). I use maple syrup but I drizzle it on their pancakes myself:wink:

    I also make the kids a smoothie at least 4 dys a week using soymilk, bannana, frozen bluberries and sometimes add 2-3 tbsp of ovaltine (depending how many wide eyed kids are around). I add 2-3 cups of soymilk, as much bluberries as the kids like (once I used an entire 16 oz bag) or I mix strawberries and blueberries whatever they perfer at the time.
    when using fresh strawberries and bannas that are not ripe I add 1tbsp of real honey.
