Veggies!

Morning!

So Day 1 of my eating plan went pretty well! It seemed like a lot of food to eat in one day - but I trust my trainer that she knows best! It's crazy though how your brain is teling you that you shouldn't be eating this much or you will get fat - the anxiety that comes with eating when you think you shouldnt be is pretty crazy actually!!

Anyways - as part of my new program I really need to up my vegetable intake - and on Day 2 I am already running out of ideas, so I am turning to you, my MFP ladies, to help me out! Can anyone give me any ideas on different vegetable dishes to try - keep in mind no sauces only vinegar, olive oil, and herbs.....or just suggest their favorite veggies to me... (and not carrot sticks!!) haha!

    Putting any veggie on the BBQ is delicious! Our fav is just broccoli tossed in a little olive oil, garlic pepper and black pepper and grilled in a veggie basket. Just make sure to watch them so they don't get too over cooked/blackened.

    Also, tossed zucchini, peppers and onions with black pepper and onions is divine!

    My mom and I are both vegetarians, we eat lots of veggies :) I would suggest getting a steamer! We steam tons of veggies most nights (favorites are peppers, onions, zucchini & squash) and we add in a bunch of garlic and other herbs and then we have them with whatever else we're eating... sometimes we'll put them on potatoes, over pasta, etc... my dad will have the veggies with the meat he's eating that night as well. Another good veggie is asparagus, spray with olive oil and squeeze some lemon juice on it.... Stuffed peppers... stuffed with other veggies and some grain, maybe quinoa? I'll try to think of more ideas!

    Roasting makes a lot of vegetables taste better to me, low heat, 375 degress F, and almost an hour, toss with olive oil, salt and pepper. I like asparagus roasted, at the end you can sprinkle balsamic on it, very yummy.
    My in-laws bundled asparagus with green beans and roasted them like this, just brushed with olice oil (and tied together with a strip of bacon, but we can ignore that detail;)
    Grill baskets are good but I have a hard time getting out to grill at night in the winter, there's no good light in our backyard.

    i like the idea of roasted veggies, too...

    I used to do ALL the "menu-planning" for the family. And then, summer 2011, my husband and I swapped certain "household matters", for the first time in 11 years!! He now does ALL the "menu-planning" (and I do ALL the bill-paying....and, yes, that means that ALL THE BILLS ARE PAID ON TIME - a very important thing for control-freak Beeps!)

    Anyway, our nanny does all the cooking....I'm not even home before 6:30 pm most nights. As such, I've had to "remind" my husband that I need MORE veggie dishes on the menu. (Because I'm also trying to go mostly "primal" with my nutrition plan.)

    This week, that meant steamed broccoli every night!! lol. Fine.

    So, I will sit down with hubby and start adding in one extra veggie dish every couple of days, so that even the left-overs I can eat - not as some way to get my kids to eat more veggies.

    AScheif, your trainer is a smart cookie and I respect her. Tell me, how do you eat when you aren't "hungry"?? I, myself, upped my calories to "maintenance" right before Xmas and I'm having a TOUGH time eating all that stuff! (I've had to add protein powder to my morning oat bran, a proten shake mid-afternoon, and I'm STILL not getting enough food in me!)

    I'm having a tough time eating back all of my exercise calories....

    And, there's NO way I'm just going to much on raw carrots or raw ANYTHING, actually. So, how do I force myself to eat (good) food when I'm just not hungry?? I mean, I could easily down a bag of potato chips, I imagine, but going for a banana or an apple - I'm just not that into it.

    Hints??

    I always try and stick with what's in season because that's what's the cheapest!

    Also agree, I love, love, love my steamer. I'll just chop up whatever veggies I have, toss 'em all in, wait 10 minutes and BAM even the boyfriend likes it.

    Search out a Farmer's Market in your area and go shopping. You may see some veggies you've never heard of before, and those folks are always willing to tell you all kinds of ways to prepare and eat them.

    I love using a wok! I just throw in some cut up broccoli, cauliflower, potato, and some orange bell pepper. Mmm

    I always consume a ton of veggies with my lunch. My hubby and kids actually make fun of me (that's OK, I can take it!) when they see my plate. I get a dinner plate, make a small sandwich and the rest of the plate is piled high with raw carrots, broccoli & cauliflower and my standard hummus to dip it in (have to portion it out though or I could polish off the whole container).

    One veggie recipe that my family loves is this Roasted Broccoli from the Snack Girl blog.

    Roasted Broccoli Recipe

    (makes 4 servings)
    2 pounds broccoli crowns
    2 tablespoons extra virgin olive oil
    1/2 teaspoon salt
    1 teaspoon sugar
    ground black pepper (optional)

    Preheat oven to 500F. Cover the bottom of a large rimmed baking sheet with aluminum foil. Place sheet on the lowest rack of the oven while oven heats up.

    Cut crowns into 4 wedges LENGTHWISE. Place broccoli in bowl and add olive oil, salt, sugar, and pepper to taste (optional). Toss to combine. When oven is heated, place broccoli on baking sheet and roast for 11 minutes (until slightly browned). Serve and enjoy!

    For the 4 of us I usually don't use 2lbs of broccoli and I usually only use 1T olive oil, a bit less than 1/2 tsp of salt and about 1tsp sugar. It's delicious!

    Thank you you guys this is sooo helpful! it looks as though I am going to have to look into getting a steamer!! And the stuffed peppers sound delish!! I do love grilling vegetables, but in the winter here it can be not as fun :laugh:

    I am going to try out some of these recipes this week to incorporate thanks a bunch! Keep em coming!!

    BEEPS, as for the eating when I am not hungry, simple answer... I just do it lol.. I know it will get easier, as my trainer told me I will start to feel hungry in between meals as my metabolism speeds up - and I can already say it is getting easier to consume that much food.... But I definitely find the veggie part to be the hardest for sure - I am not a huge fan of raw veggies so I always eat them cooked....I also try to incorporate them through like a "stirfry" or "fried rice" (not including any sauces or stuff like that so its really just my grain and veggies mixed together lol) but it seems easier to eat that way...

    I'm not sure if soup fits into your diet, but I just made a cabbage soup that's FILLED with veggies!! http://allrecipes.com/recipe/cabbage-fat-burning-soup/detail.aspx instead of using the tomato juice (too much sodium) I used low sodium v8 and I also used low sodium beef broth... this soup is massive (probably 20 servings... not lying!!) But it's low cal and all veggies :)
