As this cake is based around fluff I thought I would put the recipe here.
Macros are 27P/4C/0F
3 Egg Whites
7g Splenda
1g Xantham Gum
1 Packet SF jelly with 175ml hot and 175ml cold water (raspberry and lime jelly lite flavouring makes cola flavour)
5g Gelatine which was added to the jelly mixture
dash of vanilla essence
Just whip up 3 egg whites
In a seperate bowl dissolve 28g gelatine & 5g unflavoured gelatine in 125ml cold water, don't let it set, then add 125 boiling water. Stir
Add 7g splenda and vanilla essence to your gelatine.
Turn the egg whites back on in the mixer and slowly add in your gelatine mix.
Pour into a tray, and let it sit in the fridge for about 1.5hrs.

A clarification, is SF jelly sugar free jello mix or sugar free jelly? I'm just unclear about that. I'm thinking jello gelatin, but just to be clear. Also you have Xanthan powder listed in the ingredients but not in the directions. Where is it added? Finally, how long does it take the gelatin to dissolve in cold water? Every time I have made jello gelatin it starts with hot water, then add cold.0

yes it is sf jello. We call that jelly in Australia
I've always added the xanthum towards the end when I want to really thicken it up after the liquid is put in to the whites.
You put the gelatin into the hot water first to dissolve it. Stirring constantly. Then I add the cold water after that.
Also, you can add something like fat free yoghurt to the mix as well which changes the texture a bit if the cake is too "fluffy" for you're liking.0 -
I was going to make this tonight, picked up the sf jelly and thought of getting some unflavored stuff but was fairly sure we had some. I got home to find we don't.0

It will "probably" work anyway. Otherwise, could just double up on flavoured stuff. WOuld probably work as well0

I just finished making this sans the Xanthan gum. Since I could not find it locally, and needed to make a purchase of some other bulk stuff online, I ordered it with the rest of my order. I used cherry jelly. Hopefully it will turn out well.0

I tried Orange on Saturday. The Xanthan Gum got away from me, so it was thicker than I desired. I will try again another time. Maybe pick up some raspberry and try the mix with that and lime and see how it tastes.0

I made a strawberry one this morning. I used the Xanthan gum again, but if I don't like it as much again this time, I will leave that out next time.0

yeah, I think the xanthum is optional really in the cake. I've done plenty without.0
