Eat them.
lol.
Seriously though. I see a lot of people are good at getting their fruits in and their protein.... but they try to avoid eating vegetables. Post how many servings of yummy veggies you ate here everyday.

    I had 4 cups of sweet baby lettuce... lol.. sounds impressive... only 1 1/3 servings! haha. *sigh* I'll do better tomorrow! I can't help it's all so filling.

    You guys are REALLY going to have to step it up if you will have any chance of beating me on this challenge! lol I'm Vegetarian and my main source of cals is veggies.

    I think we should do this by the cup, instead of the "serving". It's just too hard to figure up what a "serving" is as different nutrition sites have different numbers for what a serving size is. What do you guys think? By the cup? Cup of broccoli, cup of shredded lettuce, cup of peas, cup of mushrooms, etc? Would that be fair? OR would you guys rather we do it by the weight (oz, gram)? I don't know, you pick, hun. You're the winner of last week's challenge so you pick. :) I'll be happy to do serving size if you really want, I'll just have to try and find a decent site that lists serving sizes. lol Let me know! *hugs*

    Sunny Select Mixed Vegetables- 1.5 cup
    Western Family Mixed Vegetables - .5 cup
    Broccoli - 1 cup
    Shiitake Mushrooms - 1 cup
    Bok Choy - .5 cup
    Carrots - .5 cup
    Asian mixed vegetables - .5 cup

    Brunch - (5 cups) garden salad with lettuce, mushrooms, carrots, broccoli, spinach, tomatoes, onions, and beats

    Dinner - (3.5 cups) vegetable stir fry with broccoli, mushrooms, bean sprouts, onions, and gai lan

    Today's total - 8.5 cups

    Oops I forgot to post yesterday's (the 25th) -

    Broccoli, Woodear mushrooms, King oyster mushrooms, napa cabbage, gai lan

    So 23 cups total for the week so far.

    Hopefully I'll remember to peak back in this evening and post today's (the 26th) totals.

    Yesterday I had a salad, baby spinach, celery, carrots, cucumber,and tomato. Also, spaghetti sauce, salsa.

    Wow... Most veggies I've ate in my life.
    And last night I had black beans in my broccoli and left over stir fry instead of chicken... I liked it better... I can totally see how yummy vegetarian food is! (But I still like my chicken too much to give it up yet... ) I may start doing vegetarian dinners more often though. ^__^

    @nitepagan Can you sum the amount of vegetables you had yesterday into cups please? We're doing this challenge by how many cups you had. ANd way to go on eating veggies! :D

    I really sucked yesterday. lol Had only 1 cup of fresh veggies. I DID have 3 veggie patties though (I'm sure that doesn't count though lol).

    Total this week so far for me is 28 cups.

    Hopefully I'll be back this evening to post what vegetables I ate today. :)

    lol Bysshe! :D I certainly did beat you, girl! :)

    I had five cups tonight - king oyster mushrooms, Taiwan cabbage, yellow onions, and bean sprouts (sounds gross but it was in a stir-fry with black bean garlic sauce - it was SO GOOD!

    That makes 33 cups this week! Yay! :D

    Does that make me the winner?
