So I was thinking of sharing our favorite low-carb recipes here. I will make another Discussion Topic for low fat recipes too. But I thought it would be more organized if I split them up. So if you have a low-carb recipe that you love or you haven't tried and want someone to try it out, post it here.

    GARLIC LIME CHICKEN

    1/8 tsp cayenne pepper
    1/2 tsp onion powder
    1/2 tsp thyme
    1/4 tsp paprika
    salt & pepper to taste
    4 boneless, skinless chicken breasts
    2 tsp oil divided
    1/2 tsp garlic powder
    1/3 cup chicken broth
    2 tsp honey
    1 1/2 Tbsp butter/margarine
    Juice of 1 lime

    Mix together cayenne pepper, onion powder, thyme, paprika, salt & papper.

    Coat chicken in mixture

    Heat 1 tsp oil and add chicken. Cook 5 min each side. Remove chicken and reduce heat.

    Add oil and garlic, cook 30 seconds. Whisk in juice, broth, and honey

    Add butter/margarine and return chicken to coat.

    ORANGE CHICKEN

    This one is a little time consuming, but so worth it. I like it better than the Orange Chicken from our local Chinese restaurant.

    ½ cup water
    1/3 cup orange juice
    ½ cup splenda
    2 Tbsp splenda brown sugar
    3 Tbsp rice vinegar
    2 Tbsp soy sauce
    3 Tbsp lemon juice
    ¼ tsp ground ginger
    1/8 tsp red pepper flakes

    1 ¼ cut up chicken
    1 large egg
    ¼ cup flour
    2 Tbsp oil
    Chopped red pepper
    Chopped onion
    2 Tbsp cornstarch
    2 Tbsp water

    In saucepan, whisk together 1st column of ingredients. Bring to boil.

    In small bowl, mix 2 Tbsp water and cornstarch. Whisk into sauce. Boil for 1 minute. Reduce heat and simmer.

    Roll chicken in egg and flour, add to heated oil in skillet (4-5 min). Add chicken to starch. Add red pepper and onion to pan and cook till soft. Add chicken and sauce.

    Can't wait to try the orange chicken! I love it and have been looking for a healthier way of eating it!

    Btw : my husband has diabetes also. He just learned about it, so he needs to change his lifestyle... It's part of my motivation to eat better myself (to be a model for him!). :)
