Thought perhaps it would be fun to not only share what we are having/planning for dinner, but to also perhaps give someone else an idea for future meals!

Homemade guacamole: tomato, red and orange bell pepper, red onion, cilantro, garlic, fresh lime
Served on top of a bed of lettuce, cucumbers and thinly sliced roma tomato
Grilled chicken quesadilla: fresh grilled breast of chicken seasoned with arbol and ancho chili powder, garlic, kosher salt and black pepper, mexican-blended cheeses pan-fried in a Joseph's Low carb pita pocket....

We had spaghetti squash with chicken meatballs and homemade veggie tomato sauce with mushrooms, peppers, tomatoes, garlic, onion, basil. It would have been good with parmesan but we didn't have any and it was all about using up leftovers not going out to the store.0 -
we had sausage and peppers - green and yellow peppers, onions, mrs dash garlic herb seasoning, crushed red pepper and perdue sweet turkey sausage with a side of mashed cauliflower. it was quite filling!0

I made a lighter version of chicken and sausage soup. It has turkey sausage, chicken, celery, lower sodium chicken broth, canned tomatoes, onions, bell peppers, mushrooms and some spices. It is topped with some shredded cheese and 5 tortilla chips. It was supposed to go over white rice until I figured out 2/3 cup of prepared white rice is 600 calories!! SO I put 5 tortilla chips to thicken it up.0

Not sure about tonight, but last night we had a variation of Chicken Parmesan. Super simple and healthy. Cook Chicken breast in a skillet with just enough cooking spray to keep them from sticking. Once they are cooked through add your choice of spaghetti sauce, I use Prego Heart Smart and add a bit of garlic, Onion Powder and Italian Seasoning. Serve over whole grain spaghetti and top with 2% Mozzarella & Parmesan cheese.0
