    So the Beef Roast from the LA Weight Loss cookbook is Fantastic:love:
    Here is the recipe...It counts as a Protein (for the plan that I am on that is 3 oz) and two veggies

    LAWL Beef Roast

    2-3 lb eye round roast (depending on the size of your family)

    1/2 cup red wine

    2 cups Mushrooms, finely chopped

    1/2 tsp dried dill weed ( I bought Fresh)

    1/4 tsp lite salt ( I use Mortons)

    1/4 cup green onions (scallions) thinly sliced

    4 oz plain non fat yogurt (greek is fine)

    dash white pepper ( I used regular pepper)

    1 Cup low sodium beef broth ( I use Herb-Ox)

    2 tbsp flour

    1/2 cup water



    1. Trim any excess, visible fat from the roast. Cut two pockets into the sides of the roast, making a 3 inch deep cut. place roast in large, zip-top plastic bag. pour wine over roast. Close the bag. Marinate for 3-6 hours.

    2. Combine mushrooms, water, dill weed and salt. Cook, uncovered, over medium heat until the liquid is evaporated. Stir in onion.

    3. Remove roast from marinade. Place filling into pockets.

    4. Bake in 325 oven for 1 - 1 1/2 hours (depending on the size of your roast. Meat temp. should be 150 internal temp.

    5. For Sauce, mix together yogurt, flour and pepper in a small saucepan. Stir in broth. Cook, until sauce thickens over medium heat.

    6. Slice roast between the 2 filled pockets. Place on dinner plate top with sauce.

    I was a follower of LA. When I started I was on the gold plan. I bought material for plan 1 online and plan on trying it again.
