Gluten Free Foods: What to eat and What to avoid

DEFINITION
A gluten-free diet is a diet that excludes the protein gluten. Gluten is found in grains such as wheat, barley, rye and triticale (a cross between wheat and rye).

Initially, following a gluten-free diet may be frustrating. But with time, patience and creativity, you'll find there are many foods that you already eat that are gluten-free and you will find substitutes for gluten-containing foods that you can enjoy.

DIET DETAILS
Switching to a gluten-free diet is a big change and, like anything new, it takes some getting used to. You may initially feel deprived by the diet's restrictions. However, try to stay positive and focus on all the foods you can eat. You may also be pleasantly surprised to realize how many gluten-free products, such as bread and pasta, are now available. Many specialty grocery stores sell gluten-free foods. If you can't find them in your area, check with a celiac support group or go online. [Amazon and eBay have lots of options.]

ALLOWED FOODS
Many healthy and delicious foods are naturally gluten-free:

o Beans, seeds, nuts in their natural, unprocessed form
o Fruits and vegetables
o Most soy products
It's important to make sure that they are not processed or mixed with gluten-containing grains, additives or preservatives. Many grains and starches can be part of a gluten-free diet:

YUMMY GLUTEN-FREE GRAINS
o Amaranth
o Arrowroot
o Buckwheat (Just a name, not really wheat)
o Corn and cornmeal
o Flax
o Gluten-free flours (rice, soy, corn, potato, bean)
o Hominy (corn)
o Millet
o Quinoa
o Rice
o Sorghum
o Soy
o Tapioca
o Teff

ALWAYS AVOID
Avoid all food and drinks containing:
o Barley (malt, malt flavoring and malt vinegar are usually made from barley)
o Rye
o Triticale (a cross between wheat and rye)
o Wheat
o Avoiding wheat can be challenging because wheat products go by numerous names. Consider the many types of wheat flour on supermarket shelves — bromated, enriched, phosphated, plain and self-rising. Here are other wheat products to avoid:
o Bulgur
o Durum flour
o Farina
o Graham flour
o Kamut
o Semolina
o Spelt
o Avoid unless labeled 'gluten-free'

In general, avoid the following foods unless they're labeled as gluten-free or made with corn, rice, soy or other gluten-free grain:

o Beer
o Breads
o Cakes and pies
o Candies
o Cereals
o Cookies and crackers
o Croutons
o French fries
o Gravies
o Imitation meat or seafood
o Matzo
o Pastas
o Salad dressings
o Sauces, including soy sauce
o Seasoned rice mixes
o Seasoned snack foods, such as potato and tortilla chips
o Self-basting poultry
o Soups and soup bases
o Vegetables in sauce
o Certain grains, such as oats, can be contaminated with wheat during growing and processing stages of production. For this reason, doctors and dietitians generally recommend avoiding oats unless they are specifically labeled gluten-free.

You should also be alert for other products that you eat or that could come in contact with your mouth that may contain gluten. These include:

o Food additives, such as malt flavoring, modified food starch and others
o Medications and vitamins that use gluten as a binding agent

    Mine too. (Well, the sugars also. I have such a HUGE sweet tooth.) Gotta keep reciting, It's only 21 measly days out of the approx. 18,000 I have left to live.

    In the end though... If you have a hard time with the gluten part... Remember moderation. Sometimes if we feel restricted, then we find ourselves over compensating on the extreme. So if you need that piece of toast or whatever your vice is, better to have a little piece and move on with the rest of the cleanse. Again... It's not all or nothing. Baby steps.... :)

    Not really hard at all,just avoid most processed food !
    FOR what you are trying to accomplish here.,in 21 days, you will feel Great!

    So...am I right in believing that I can't have oats? ^^; Like, granola counts as something with gluten in, right?

    Oats are allowed in moderation. But the whole grain version, not processed. So you're looking for steel cut oats. Granola no because it's processed with sugars and in most cases preservatives added. But you can definitely make your own without all the crap and be right on point with the guidelines.

    Can I eat meat like beef, chicken, pork? Can I eat canned tuna in water? I read the label and all it contains is light tuna, water, vegetable broth, and salt.

    General rule.... If it had a mother, it's out. So no animals, fish, and animal-based products like chicken stock, eggs, jello (which has gelatin from the animal muscle, etc.

    Fruits and veggies are in ALL the way. Try to go organic where you can, being sure to peel and discard the outer layer of the produce when you can't. Dried fruits are included in this, given that they are not sweetened and do try to buy those without sulfur.

    Hope this helps. You can do this! Totally believe in you. Most of us are new to this, but together we will pull through. :)

    I don't understand why I cannot eat products with a mother? I mean what if I went fishing and caught a fish. Can I not eat it? And why not? I am not trying to be difficult, but just trying to understand and meet all the guidelines.

    Also, so far all I have eaten today is mushrooms, carrots, and apricots. I have only consumed 220 calories. That is very low. With this cleanse, how many calories are we suppose to consume daily? I hear it is scary to consume less than 1200 calories like our body goes in starvation mode or something...

    I know the cleanse doesn't start yet but I am just trying to get use to it before hand. I got the mentally prepared down as I am committed and now to actually physically start doing it, I am still not sure how to go about that part as I have many things to learn and understand. Thank you for being so patient.

    @pooterly... I responded to the email you had sent me with the same questions. I will though for the sake of space, delete this exchange and repost the answers and info for all to access in it's on posting. thanks again for the questions. I'm sure the info it prompts is useful for many of us.
