Hey Ladies, what's for dinner?

I love seeing what others are making for dinner and possibly gaining some ideas. Post your menu here!

Tonight I am having:
Baked Tilapia
Mashed Sweet Potatoes
Cabbage

For dessert a fruit salad (strawberries, blueberries and banana's) topped with whipped cream.

P.S. you can post your dinner menu here any day of the week, not just tonight...Keep it going!

  • Hi Jasha!

Tonight is boring, but my DD14 loves it: Big pile of lettuce, mandarin oranges, bbq shredded chicken breast and light ranch.

Will probably have cottage cheese and pears with it.

Mexican Crockpot chicken Delish. Made it last night. So will be left overs

    Chicken Breast- (3-4)
Low Sodium Taco Seasoning( put on top of chicken)
Low Sodium black beans(do not drain)
    Olives(drained)
    Green Chopped Chilies
    Diced Tomatoes (do not drain)
    low sodium salsa

Throw everything in crockpot(chicken on the bottom) cook for 6-7 hours on low. I also pull the chicken out and shred it and place back in the crockpot

Top with low-fat mozzarrella cheese and fat free sour cream.

you can eat with tortilla or tortilla chips but I ate it by itself!!!

I'm having salad with tuna and a baked sweet potato... I probably won't eat both in one sitting though... they really don't go together!

Ok, I am a kitchen experimenter:

    Yesterday:
There was a coconut milk theme so I had:
butternut squash quinoa risotto (made with coconut milk
    "creamed" spinach with coconut milk
chicken with a coconut tamarind marinade

    Today:
    roasted potatoes
    scrambled eggs
    bacon
salad (ingredients TBD) or steamed broccoli
