Great Lasagna recipe with no PASTA!! :-)

Legal Lasagna
8 oz lean beef
2 cups tomato, diced
1 cup celery, chopped
½ cup green onion, chopped
1 cup green pepper, chopped
2 garlic cloves, minced
Black pepper
Cayenne pepper
3 cups spinach leaves
8 oz 1% cottage cheese
10 oz tofu (medium-firm)
2 oz mozzarella, grated

Preheat oven to 400
Brown beef
Add tomato, celery, onion and green pepper.
Season sauce to taste with garlic, pepper and cayenne and let simmer
Wash spinach
Layer sauce, spinach, cottage cheese and tofu
Top with cheese and bake for 1 hour

Variation: Omit tofu and use an additional 8 oz of ground beef.
