I have a ton of carrots from my grandfather's garden. I need some ideas on what to make with them. Suggestions?

My ROCKING moroccan carrot salad - its raw, vegan and awesome! Here it is for One serving - double up as you wish.
Organic Shredded Carrots, 0.5 cup (85G)
Organic Raisins - Mini Snacks, 1.5 box (14g)
Spices - Ground Cumin, 0.5 tsp
Spices - Cinnamon, ground, 0.5 tsp
Grated Garlic Clove, 0.5 Medium Clove (4g)
Extra Virgin Olive Oil, 0.5 tbsp (15mL)
Fresh Lemon Juice 1tbsp
1. Get to shredding!
2. Combine raisins with carrot shreds!
3. Combine cumin, cinnamon, grated garlic in separate mini bowl
4. Pour in the EVOO & Lemon juice with the spice blend & mix mix mix
5. mix mix mix with carrots & raisins!0 -

Ingredients
Organic Whole Wheat Pastry Flour, .75 cup
Baking Soda, .5 tsp
Baking Powder, 1 tsp
Salt, .25 tsp
Cinnamon, ground, .25 tsp
Cloves, ground, .1 tsp
Nutmeg, ground, .1 tsp
Allspice, .25 tsp
Ginger, ground, .1 tsp
Truvia Natural Sweetener, 1 serving
Organic Unsweetened Applesauce, .75 cup
Vanilla Extract, .5 tsp
Carrots, raw, .75 cup, grated
Raisins, 30 grams
Directions
Mix wet ingredients together and then dry ingredients together. Mix all together and fold in raisins.
Bake for 20-25 minutes.
Serving Size: Makes 2-3 servings (6 or 7 muffins)
Number of Servings: 20 -
Mine is simplier
1/2 food processor or how ever much you want to make
carrots and walnuts equal parts
Garlic
touch of oil if you like,
Poultry Seasoning
1/4 onion
Blend and stuff into a pepper
If you want a complete protein, and in flax seeds/hemp seeds
add a touch more EFA oil if you want to add the seeds

ahhhh....here is the moroccan carrot salad that everyone has been discussing! i was trying to figure out where the recipe was posted! Sounds delicious, I can't wait to try it....I do have some baby carrots that I could throw in the food processor when I get home!0
